Quick & Easy Pasta Sauce

Really easy and fast and delicious!
- 1 t. olive oil
- 1 cup chopped onion
- 4 cloves minced garlic
- 1/2 cup red wine OR 2T balsamic vinegar (we use the vinegar)
- 1 T sugar or sweet and low equivalent
- 1 T chopped fresh basil or 2 t. dried basil
- 2 T tomato pasted
- 1/2 t. Italian seasoning (any kind or mix will do)
- 1/4 t. black pepper
- 2 15 oz. cans diced tomatoes
- 2 T chopped fresh parsley
Sausage Pizza Soup

This is the best idea ever
- 1/2 lb. Italian turkey sausage links, casings removed
- 1 medium zucchini, sliced
- 1 cup sliced fresh mushrooms
- 1 small onion, chopped
- 1 14.5 oz can diced tomatoes
- 1 cup water
- 1 cup fat-free, less-sodium chicken broth
- 1 t dried basil
- 1/4 t. pepper
- I add some extra spices: oregano, crushed red pepper, more basil
Lemon-Oregano Chicken Drumsticks

So good hot or cold the next day for lunch
- 4 T fresh lemon juice
- 4 T coarsely chopped fresh oregano
- 4 garlic cloves, pressed
- 2 T EVOO
- 2 t finely grated lemon peel
- 16 chicken drumsticks
Caesar Cole Slaw

- 1 16 oz. package coleslaw blend mix
- 1 cup Kraft classic caesar salad dressing
- 1/2 cup grape tomatoes, halved
Walnut and Rosemary Oven-Fried Chicken

Lo-cal alternative to fried chicken
- 1/4 cup low fat buttermilk
- 2 T Dijon mustard
- 4 6 0z. chicken cutlets
- 1/3 cup panko breadcrumbs
- 1/3 cup finely chopped walnuts
- 2 T grated fresh Parmigiano-Reggiano cheese
- 3/4 t minced fresh rosemary
- 1/4 t each kosher salt and freshly ground black pepper
- Cooking spray
- Rosemary leaves
BBQ a la Brendel

Great on potato rolls with yellow mustard and hamburger dill pickle slices
- 3 lbs. boneless chuck
- 2 T shortening
- 1 large onion, chopped
- 2 T vinegar
- 2 T lemon juice
- 3/4 cup water
- 1/2 cup celery, chopped
- 2 cups ketchup
- 3 T worchestershire
- 2 T brown sugar
- 1 T yellow mustard (I use at least 3 T)
- 2 T chili powder
- 1 t salt
- 1/4 t pepper
Tortellini Soup with Cannellini, Kielbasa, and Kale

So delicious. Kale really makes the soup
- 2 T EVOO
- 1 onion, chopped
- 4 garlic cloves, minced
- 1/2 t dried crushed red pepper
- 4 cups chopped kale
- 1 15 oz. can cannellini, rinsed and drained
- 12 oz. kielbasa, sliced (reduced fat/turkey sausage is fine)
- 1 cup chopped fennel bulb
- 1 1/2 T chopped fresh thyme
- 10 cups fat-free, less-sodium chicken broth
- 1 9 oz. package cheese or pumpkin tortellini
- 1 cup grated asiago or parmesan cheese
Pace Picante Pasta Salad

Easy, makes lots, and is even better the next day
- 1 lb 3-color rotini pasta
- 1 1/2 cups sliced celery
- 1 1/2 cups sliced fresh mushrooms
- 3/4 cups sliced scallions
- 1 cup mayo (or to taste)
- 2/3 cup Pace Picante sauce
Buffalo Chicken Salad Sandwiches
