Really easy and fast and delicious!

  • 1 t. olive oil
  • 1 cup chopped onion
  • 4 cloves minced garlic
  • 1/2 cup red wine OR 2T balsamic vinegar (we use the vinegar)
  • 1 T sugar or sweet and low equivalent
  • 1 T chopped fresh basil or 2 t. dried basil
  • 2 T tomato pasted
  • 1/2 t. Italian seasoning (any kind or mix will do)
  • 1/4 t. black pepper
  • 2 15 oz. cans diced tomatoes
  • 2 T chopped fresh parsley

  • 1/2 lb. Italian turkey sausage links, casings removed
  • 1 medium zucchini, sliced
  • 1 cup sliced fresh mushrooms
  • 1 small onion, chopped
  • 1 14.5 oz can diced tomatoes
  • 1 cup water
  • 1 cup fat-free, less-sodium chicken broth
  • 1 t dried basil
  • 1/4 t. pepper
  • I add some extra spices: oregano, crushed red pepper, more basil

  • 3 lbs. boneless chuck
  • 2 T shortening
  • 1 large onion, chopped
  • 2 T vinegar

  • 1 9 oz. package cheese or pumpkin tortellini
  • 1 cup grated asiago or parmesan cheese
