Chicken Marbella

From the Silver Palate Cookbook
- 4 chickens, 2 1/2 lbs. each, quartered
- 1 heard of garlic, peeled and finely pureed
- 1/4 cup dried oregano
- coarse salt and freshly ground black pepper to taste
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 1 cup pitted prunes
- 1/2 cup pitted Spanish green olives
- 1/2 cup capers with a bit of juice
- 6 bay leaves
- 1 cup brown sugar
- 1 cup white wine
- 1/4 cup parsley, chopped
Joanie's Pheasant Francaise

You'll never make Chicken Francaise again after this
- 6 to 8 skinless pheasant breasts, sliced horizontally, then pounded
- Seasoned flour
- Butter
- Olive oil
- 2-3 eggs
- 1/2 cup grated Romano cheese
- 2 T whole milk or half-and-half
- 2 cups chicken broth
- 1 to 1 1/2 cups white wine
- Juice of 1 or 2 lemons
- Fresh parsley, chopped
Marinated Peppers and Mozzarella

Different and beautiful presentation
- 4 cups baby sweet peppers (orange, yellow, red, green)
- 1/2 cup EVOO
- 3 garlic cloves, crushed
- 1 t grated lemon rind
- 1/2 t crushed red pepper
- 1/2 t salt
- 3 oz fresh baby mozzarella balls (I used more}
- 1/4 cup fresh small basil leaves
- 1 t fresh lemon juice
Cran-chili Meatballs

Really awesome sweet and sour flavor--use Angus beef meatballs from the frozen section at the store
- 1 14 oz. can jellied cranberry sauce
- 1 12 oz. bottle chili sauce
- 1 2 lb. bag frozen, pre-cooked, cocktail size meatballs
BLT Deviled Eggs

Great twist on one of my favorite egg dishes
- 8 hard cooked eggs
- 1/3 cup mayo
- 2 T ranch dressing
- 3 slices cooked bacon, crumbled
- 4 cherry tomatoes, chopped
- 2 T shredded lettuce
Black Pepper Brown Sugar Bacon

- 1 lb. thick cut bacon
- 1/2 t. freshly ground black pepper
- 1/2 cup brown sugar
Cranberry Margaritas

Use the expensive tequila
- 1 1/4 cups premium tequila
- 1/1 /4 cups frozen cranberry juice cocktail concentrate, thawed
- 1 cup canned jellied cranberry sauce
- 10 T fresh lime juice
- 6 T orange liqueur, like Grand Marnier
- Fresh cranberries for garnish
Chipotle Pulled Pork

Really good and not that much trouble
- 1 7 oz. can chipotle chiles in adobo sauce
- 1/4 cup BBQ sauce
- 1 t garlic powder
- 1 1/2 t cumin
- 1 1-lb. pork tenderloin, trimmed and cut into 1/2 inch cubes
- 1 14.5 oz can dices tomatoes, undrained
Spanish Turkey Meatball Stew

Very easy and very tasty
- 2 T EVOO
- 1 large onion, chopped
- 5 cloves minced garlic
- Kosher salt
- 1 t smoked paprika
- 1 cup sliced carrots
- 2 14oz cans low-sodium diced fire roasted tomatoes
- 2 cups low-sodium chicken broth
- 1 15oz can chickpeas, drained and rinsed
- 1 1/4 lb lean ground turkey
- 3/4 cup loosely packed parsley, chopped, plus more for topping
- Freshly ground pepper
Cheeseburger Pot Pie

Great favorite with kids and grown-ups!
- 1 1/2 lbs. lean ground beef
- 1/4 cup chopped onion
- 3/4 cup ketchup
- Generous squirt of yellow mustard
- 2 T chopped pickle (hamburger dill is best)
- 1/8 t pepper
- 1 cup shredded cheddar cheese
- 1 pkg frozen crinkle fries
