Braised Onion Slices

In a skillet, melt butter, Brown Sugar, and Salt over low heat until bubbling
- 2 1/2 Tbsp of butter
- 1 Tbsp of Brown Sugar
- 1/4 Tsp of Salt
- 8 thick slices of onion (almost 1/2" slices)
- 1/4 Tbsp of Parsley
- Thyme and Pepper to taste
Carrot Cake

Cake: Combine all dry ingredients and mix well

- 2 Cups Sugar
- 2 Cups Flour
- 2 tsp Baking Soda
- 2 tsp Cinnamon
- 1 1/2 Cups Wesson Oil
- 3 Cups Grated Carrots
- 4 Eggs
- Icing
- 1 8oz Cream Cheese block room temperature
- 1 Stick of Butter room temperature
- 1 Box of Confectioner's Sugar
- 1 tsp of Vanilla
- 1 Cup of Chopped Pecans
Zucchini Bread, Second Recipe

Mom had two recipes for Zucchini Bread
- 3 C All-Purpose Flour
- 1 Tsp Baking Soda
- 3/4 Tsp Salt
- 1 1/2 Tsp Cinnamon
- 1/4 Tsp Ground Cloves
- 1/8 Tsp Ground Ginger
- 1/8 Tsp Ground Nutmeg
- 1 C Chopped Nuts
- 1 C Sugar
- 3/4 C Firmly Packed Brown Sugar
- 1 C Vegetable Oil
- 3 Eggs, room temperature and beaten
- 1/4 C and 2 Tbsp of Whole Milk
- 2 Tsp of Vanilla
- 2 C Shredded Zucchini
Tacos Ole

Cook Meat until brown and drain off fat
- 1 lb of Ground Beef (or Turkey)
- 1 Cup of Salsa
- 1/4 Cup Red Hot Sauce
- 2 Tsp of Chilli Powder
- 8 Taco Shells, heated
- Lettuce, Tomatoes, shredded cheese (your preference), and sour cream for preparation of the tacos. You can add other ingredients you may prefer when forming the taco's.
Potato Skins with Cheese and Bacon

Bake Potatoes until done. Cut in 1/2 lengthwise
- 4 Medium size Baking Potatoes
- Vegetable Cooking Spray
- 4 Slices of Turkey Bacon
- 3/4 Cup of Shredded Reduced Fat Cheddar Cheese
- 1/4 Cup Nonfat Sour Cream
- 1 Tbsp minced Chives
Cheddar Baked Potato Slices

- 1 Can of Cream of Mushroom Soup
- 1/2 Tsp Paprika
- 1/2 Tsp Pepper
- 1 Cup Shredded Mild Cheddar Cheese
- 4 Medium Sized Baking Potatoes Cut into 1/4" Slices (about 4 Cups)
Banana Nut Bread

Preheat Oven to 350 degrees
- 2 Cups of All-Purpose Flour
- 1/2 Cup of Butter
- 1 Cup of Sugar
- 4 Bananas (well rippened)
- 2 Large Eggs
- 3/4 Cup (1.5 Sticks) of unsalted Butter, melted and cooled
- 1 1/2 Tsp of Baking Soda
- 1 1/8 Cup of Flour
- 1/2 Tsp of Salt
- 1 Tsp of Pure Vanilla Extract
- 1/2 Cup of Pecans or Walnuts, finely chopped
- Confectioners' Sugar for dusting

- 1/2 Cup of Skinny White Sauce.
Hungarian Stuffed Peppers

Per-heat oven to 350 degrees Cut tops off Green Peppers
- 6 Green Peppers (plump uniform)
- 1 lb Ground Beef
- 1/2 Cup Chopped Onion
- 1 Egg (room temperature)
- 1 Cup of Uncooked Rice
- 1 Tsp of Salt
- Black Pepper to taste
- 1 10 1/2 oz Can of Tomato Soup
- 1 Tbsp of Flour
- 1 Cup of Thick Sour Cream (Not Fat Free)
