Ingredients
- Cake
- 2 Cups Sugar
- 2 Cups Flour
- 2 tsp Baking Soda
- 2 tsp Cinnamon
- 1 1/2 Cups Wesson Oil
- 3 Cups Grated Carrots
- 4 Eggs
- Icing
- 1 8oz Cream Cheese block room temperature
- 1 Stick of Butter room temperature
- 1 Box of Confectioner's Sugar
- 1 tsp of Vanilla
- 1 Cup of Chopped Pecans

Preparation
Step 1
Cake:
Combine all dry ingredients and mix well.
Add Eggs and Oil
Mix Well
Add Carrots and beat on medium speed mixer for 2 minutes.
Grease and Flour three 9-inch cake pans
Preheat a 350 degree oven
Pour batter evenly into the three cake pans and bake for 25 to 30 minutes.
Icing
Mix Cream Cheese and Butter until fluffy.
Add Sugar, Vanilla, and Pecans.
Spread Icing between the three cooled layers and top of cake. Do not ice sides.
