Potato Skins with Cheese and Bacon

Ingredients
- 4 Medium size Baking Potatoes
- Vegetable Cooking Spray
- 4 Slices of Turkey Bacon
- 3/4 Cup of Shredded Reduced Fat Cheddar Cheese
- 1/4 Cup Nonfat Sour Cream
- 1 Tbsp minced Chives

Preparation
Step 1
Bake Potatoes until done.
Cut in 1/2 lengthwise.
Scoop out Pulp leaving 1/4" shell.
Reserve Pulp for another use.
Place shells on sheet.
Spray inside of shells with Cooking Spray.
Bake in pre-heated 425 degree oven 8 minutes or until crisp, set aside.
Cook Bacon in Microwave till done and chop into pieces.
Sprinkle Cheddar Cheese in shells and let it melt.
Put Bacon in Shells.
Top with Sour Cream and Chives.
