Delicious Cranberry Muffins

1. Preheat oven to 375 degrees F
- 2 cups unbleached all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 stick unsalted butter, softened, plus more for preparing the muffin tin
- 1 tablespoon grated orange zest
- 3/4 cup granulated sugar, plus 1 Tablespoon for sprinkling on top of muffins
- 2 large eggs
- 1/2 cup milk
- 2 Cups Fresh or Frozen Cranberries

1. In a small bowl combine warm water, yeast, and tablespoon of brown sugar

Four-Step Lemon-Onion Chicken

1. Season the chicken with the dried thyme, and salt and pepper to taste

- 1 onion, chopped
- 1 carrot, chopped
- 1/4 lb. fresh sliced mushrooms
- 3 tbsp. fresh chopped basil
- 3 tbsp. fresh chopped parsley
- 1 (16-oz.) container ricotta cheese
- 1/2 cup heavy cream
- 1 cup chicken broth
- 1 cup grated provolone cheese
- 3/4 cup crumbled feta cheese
- 1 (28-oz.) can Italian plum tomatoes, drained and chopped
- 1 1/2 cups of freshly grated Parmesan
- Salt and pepper to taste

- 8 tablespoons unsalted butter, melted
- 2 large eggs plus 1 large yolk
- COATING

- We brush the warm muffins liberally with melted butter before rolling them in the cinnamon sugar. The butter helps the coating stick and makes the muffins taste more fried.
