Process, 1) Preheat your oven to 400 degrees, line a baking sheet with aluminum foil and set aside

- 1/2 lb of tube shaped pasta (penne, rigatoni, ziti)
- 2 Tbsp of Olive Oil, plus a little extra
- 1 28 oz can of Italian Peeled Crushed Tomatoes
- 1 Large Eggplant, most of the skin peeled and cut into large cubes
- 1 Small Onion, diced
- 2 Cloves of Garlic, minced
- 1 cup of Mozzarella, cubed
- 1/4 cup (or to taste) of Parmiggiano Reggiano
- Fresh Chopped Basil
- Salt and pepper, to taste

Mix together cream cheese, butter, and flour and divide into 4 equal parts
- 8 oz. cream cheese
- 1/2 lb butter
- 2 1/4 cups flour
- Rasberry preserves
- pecans or walnuts-chopped
