Process, 1) Bring a large pot filled with water up to a boil
- Ingredients:
- Serves 4
- 1/2 lb of Whole Wheat Penne
- 2 Large Zucchini, chopped
- 1 cup of Cherry Tomatoes, halved
- 2 Cloves of Garlic, minced
- 1 Tbsp of Olive Oil
- 1 tsp of Butter
- Parmiggiano Reggiano
- Salt and Pepper to taste
- Few Leaves of Fresh Basil
Eggplant Parmesan

Serves 6 Process, 1) In a shallow dish whisk the eggs, season with salt and pepper and set aside
- Ingredients:
- 1 Large Eggplant, about 1 1/2 pounds, sliced lengthwise about 1/8 of an inch thick.

- Vegetable oil, enough to have about 1/4 inch of oil in the pan

Crispy Chicken with Spring Braised Vegetables

Process, 1) Preheat a large pot or dutch oven over medium high heat, add the oil and let that get nice and hot
- Ingredients:
- Serves 8
- 8 Pieces of Skin-on Bone-in Chicken Thighs
- 2 Tbsp of Olive Oil
- 6 Large Shallots, peeled and quartered
- 1 Bunch of Asparagus
- 3 Large Carrots, Peeled and Sliced on a diagonal
- 2 Medium Zucchini, sliced thick on a diagonal or 1/2 pound of baby Zucchini
- 1 cup of Fresh Shelled Peas or frozen defrosted spinach if you cant find fresh
- 1 Tbsp of Butter
- 1 Tbsp of All Purpose Flour
- 2 Tbsp of Dill, chopped
- 2 Tbsp of Fresh Parsley, chopped
- 1 tsp of Lemon Zest
- 10 Large Button Mushrooms, halved
- 1/2 cup White Wine
- 1 1/2 cups of Chicken Stock

Directions For the pasta: Bring a large pot of salted water to a boil over high heat
- Pasta:
- Ingredients
- Salt
- 1 pound penne pasta
- Vegetables:
- Vegetable oil cooking spray
- 2 large zucchini, ends trimmed, cut in half lengthwise and then crosswise into 1-inch half-moon pieces (about 12 ounces)
- 3 medium summer squash, ends trimmed, cut in half lengthwise and then crosswise into 1-inch half-moon pieces (about 12 ounces)
- 1/2 small cauliflower, cut into 1/2-inch pieces (about 2 cups)
- 2 medium carrots, diced into 1/2-inch pieces
- 2 cloves garlic, roughly chopped
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- Vinaigrette:
- 1/4 cup extra-virgin olive oil
