BAKED JUICY CHICKEN BREASTS

*To brine your chicken breasts, simply fill a large bowl with enough warm water to cover breasts
- 2 boneless skinless chicken breasts, that have been pounded to even thickness and brined in saltwater (*see easy instructions below)
- 1 Tablespoon melted butter or olive oil
- 1/2 teaspoon freshly-cracked black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika (I prefer smoked paprika)
Multi Grain Bread

• Combine all of the above dry ingredients in a large mixing bowl
- 3 cups Unbleached White All-Purpose Flour
- 1 cup Organic Dark Rye Flour
- 1 cup Whole Wheat Flour
- 1 cup 10 Grain Hot Cereal
- 2 tsp Salt
- 2 tsp Sugar
- 4-1/2 tsp Instant Yeast
- 3 cups Water (warm)
- 1 Olive Oil (splash of)
STEAMED SALMON-SOY & LEMON

Thoroughly rinse the fish in cold water and pat dry
- 2 (1-pound) salmon fillets
- 1 tablespoon soy sauce
- 1/4 teaspoon salt
- 2 scallions, cut into 4-inch pieces
- 4 slices ginger
- 1 lemon
- 2 teaspoons sesame oil
Rotisserie Herb Chicken

1. - Prepare grill for indirect high heat cooking
- 1 - 4 -5 Lb whole chicken
- 1/2 - yellow onion (cut in half)
- 1/2 - lemon (cut in half) + zest
- 1 tablespoon – rosemary, chopped + a sprig
- 1 tablespoon – thyme, chopped + a sprig
- 1 tablespoon – sage, chopped + a sprig
- 1 teaspoon – granulated garlic
- 1/2 teaspoon – sea salt
- 1/2 teaspoon – fresh ground black pepper
CHAMPAGNE VINAIGRETTE

Place all ingredients in a mason jar, cover tightly with lid and shake vigorously until combined
- Makes about 1 cup
- Ingredients
- 1/4 cup Champagne vinegar
- 1/2 cup extra virgin olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoons honey
- 1 garlic clove, finely chopped
- 1 tablespoon fresh lemon juice
- 5 to 6 dashes hot sauce (Tabasco)
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Fruit & Oatmeal Flax Smoothie ****AAA

Add the ice and all ingredients and blend until smooth
- 1 cup ice
- 1 cup mixed berries (or whatever fruit you'd prefer)
- 1/2 cup oats
- 1 cup milk
- 1/2 cup Greek yogurt
- 2 tablespoons flax seed meal (or your own ground flax seeds)
- 1 Tbs Agave juice
ASIAN SALMON IN FOIL

- 1/4 cup honey
- 3 cloves garlic, minced
- 2 tablespoons reduced sodium soy sauce
- 1 tablespoons seasoned rice vinegar
- 1 tablespoon sesame oil

- 1 teaspoon Sriracha, optional
- Freshly ground black pepper, to taste

- 1/2 cup red quinoa
- 3 tablespoons parsley, finely chopped
- 7 oz. (200 grams) cooked salmon (leftover), torn into smaller pieces

- 1/2 teaspoon salt
