VEGETABLE BEEF STEW *****AAA (SLOW COOKER)

In a large saute pan, heat 1 tablespoon of the oil over medium-high heat
- 2 tablespoons olive oil
- 1.5 pounds sirloin steak, or beef stew meat (or whatever lean steaks are on sale!), cut into about 1" cubes
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 cup diced carrots
- 1 cup diced celery
- 1 lb. potatoes (I like Yukon Gold), diced and (if desired) peeled
- 8 cups beef stock
- 2 bay leaves
- 1 (28 oz.) can diced tomatoes, with juice
- 1 Tablespoon worcestershire sauce
- 1 Tablespoon Italian seasoning, homemade or store-bought2 teaspoon salt, or more/less to taste
- 1/2 teaspoon freshly-ground black pepper
- (optional garnish: chopped fresh parsley)

Chinese Roast Pork Tenderloin

- 5 cups unsalted chicken stock
- 1/2 pound very small red potatoes, quartered
- 1 cup frozen green peas
- 1 (15-ounce) can unsalted cannellini beans, rinsed and drained
- 2 cups fresh baby spinach
- 1 teaspoon fresh thyme
- 1/4 cup torn fresh basil
- 1/2 ounce Parmesan cheese, shaved
- NOTE: For extra protein add 1 lb cubed chicken. brined.
Stuffed Calamari

- 1 quart low-sodium vegetable broth

- One two-inch Parmesan cheese rind (optional)
- 1 1/2 tsp dried thyme
- 2 bay leaves
- 1 1/2 tsp Sea salt
- 1/4 tsp freshly ground black pepper
- 1 bunch kale, stems and tough center ribs removed, leaves roughly chopped (about 6 packed cups)
- One 15-ounce can organic cannellini beans, rinsed and drained
- One 15-ounce can organic kidney beans, rinsed and drained
