Chicken Soup Supreme

1. Cook the Vegetables: Warm a teaspoon of oil over medium heat in the dutch oven or soup pot
- 1 large yellow onion, peeled and diced
- 3 stalks celery, diced
- 3 carrots, peeled and diced
- 1 to 3 garlic cloves, to taste
- 1 1/2 pounds (about 6) chicken thighs, preferably bone-in
- 1 bay leaf
- 1 to 2 quarts chicken stock
- 1/2 pound noodles
- 2 teaspoons vegetable oil
- 1 to 3 teaspoons salt

- 1/4 cup chopped onion
- 1/2 cup seasoned dry bread crumbs

- 2 lbs boneless, skinless chicken breast, cut into 1" cubes

- 2 tablespoons oil
- 1/2 cup low sodium chicken broth
- 1/3 cup low sodium soy sauce
- 1/3 cup balsamic vinegar or Chinese black vinegar
- 1/4 cup sugar
- 2 tablespoons hoisin sauce
- 6-10 dried red chili peppers, split and seeds removed (adjust according to desired heat level)
- 1 orange bell pepper, sliced
- 1/2 medium white onion, sliced
- 4 cloves garlic, minced
- 1 teaspoon fresh ginger, minced or grated
- 2 tablespoons cornstarch
- Peanuts or cashews, to top
- Green onion, to garnish
- Rice, to serve
Ginger-Soy Steamed Fish

For the sauce Combine the ingredients for the sauce in a small bowl
- 2 Tablespoons finely sliced ginger, sliced into slivers
- 2 cloves garlic, minced
- 3 Tablespoons canola oil
- 1 Tablespoon light soy sauce
- 1 Tablespoon dark soy sauce
- 1 Teaspoon oyster sauce
- 1 Teaspoon toasted sesame oil
- 1/2 Teaspoon sugar (optinal)
- 1/2 Teaspoon cornstarch
- 1/8 Teaspoon ground white pepper
- 1 1/2 Pound or four 6-ounce sea bass or halibut fillets
- 2 Tablespoons canola oil
- 1/4 Cup scallions, white parts only, sliced finely on a bias
- 3 Tablespoons cilantro leaves
SEAFOOD STEW

Heat the oil in a 4 to 6 quart sauce pot
- 1/4 cup extra virgin olive oil
- 4 crushed garlic cloves
- 6 peeled and seeded Roma tomatoes cut into thin strips
- 1 cup clam juice
- 1 5oz can chopped clams
- 1/2 cup dry white wine
- 1 pound skinned saltwater halibut or cod cut into 2 inch chunks
- 21 large peeled and deveined raw shrimp
- 1/2 cup finely shredded fresh basil leaves or 1 tsp dried basil
- 1/2 cup chopped flat leaf parsley

Braised Potatoes with Tomatoes and Onions

In a medium skillet, cook the onions in the oil over medium heat until tender and golden, about 8 minutes
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 1/2 cups peeled, seeded, and chopped fresh or canned tomatoes
- 1 teaspoon dried oregano
- 2 pounds potatoes, such as Yukon Gold, peeled and cut into bite-size pieces
- Salt and freshly ground pepper
- 1/2 cup freshly grated Parmigiano-Reggiano
Chicken Teriyaki Rice Bowl

- 4 chicken tenders

Tilapia Tomato Basil Fillets

Heat oven to 400°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray
- 2 tablespoons fresh lemon juice
- 2 teaspoons grated lemon peel
- 2 teaspoons olive oil
- 4 tilapia fillets, about 1/2 inch thick (1 lb)
- 3 tablespoons chopped fresh basil leaves
- 1/2 teaspoon salt
- 1/4 teaspoon lemon-pepper seasoning
- 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, drained
- 3 tablespoons grated or shredded Parmesan cheese
