Turkey and Spinach Loaf

Fold a 2-foot length of aluminum foil in half lengthwise
- 1 1/2 pounds fresh spinach, trimmed, or one 10-ounce package frozen spinach
- 1/4 cup water (if using fresh spinach)
- 3 slices Italian bread
- 1 1/2 pounds ground turkey
- 1 cup chopped mushrooms
- 4 ounces pancetta, chopped
- 1 garlic clove, finely chopped
- 2 large eggs
- 1 cup freshly grated Parmigiano-Reggiano
- 1/4 teaspoon ground nutmeg
- Freshly ground pepper
- 1 cup peeled, seeded, and chopped fresh or canned tomatoes
- 1/2 cup Chicken Broth or canned chicken broth
POTATO FISH CHOWDER

1. In a 5-quart saucepan, melt butter over medium-high heat
- 2 tablespoons butter
- 6 scallions, coarsely chopped
- 2 stalks celery, coarsely chopped
- 4 garlic cloves, minced
- 3 tablespoons all-purpose flour
- 2 bottles (8 ounces each) clam juice
- 1 1/2 pounds scrubbed new potatoes, cut into 1/2-inch pieces
- 1/2 dried bay leaf
- 1 pound cod fillet, cut into 2-inch chunks
- 1 cup whole milk
- 1 TSP Coarse salt and a dash of ground pepper

- 3/4 tsp sugar

- 1/4 cup melted butter
- 1/2 cup hot water
Poached Salmon with Dill

1 Sprinkle the salmon fillets with a little salt
- 1 to 1 1/2 pounds salmon fillets, pin bones removed
- Salt
- 1/2 cup dry white wine (a good Sauvignon Blanc)
- 1/2 cup water
- 1 shallot, peeled and thinly sliced or a few thin slices of onion
- Several sprigs of fresh dill or sprinkle of dried dill
- A sprig of fresh parsley
- Freshly ground black pepper
- A few slices of fresh lemon to serve
BANANA-PEACH-YOGURT

1Blend the yogurt, peach and banana on high until completely smooth
- 3/4 cup plain Greek yogurt, frozen
- 2 cups cubed fresh peach or frozen
- 1 cup sliced ripe banana

Turkey Enchiladas (easy)

1. Preheat oven to 350 degrees F
- 1 pound lean ground turkey
- 1 1/2 cups diced onion
- 1 1/2 cups (about 2 medium) finely diced zucchini
- 12 tortillas 12” tortillas
- 2 1/2 cups enchilada sauce, canned or homemade
- 3 cups cheddar- jack shredded cheese
- Serve as desired with: shredded lettuce, avocado, cilantro, sour cream
PORK & APPLES CROCK POT

Place the pork chops at the bottom of your crock pot
- to to large skillet over medium heat. Once hot use a slotted spoon to scoop the shrimp out of the marinade and into the hot skillet, season with salt and pepper. Make sure to scoop up all the garlic as well.
- 2-3 1 to to pink, about 2-3 minutes per side. Remove the shrimp from the pan leaving the garlic in the skillet. Add the salted butter and 1 teaspoon pepper (or more or less to your taste) to the skillet.

- Drizzle with the warm garlic butter over the shrimp and serve alongside rice, fresh pineapple slices and lemon wedges. Garnish with fresh chopped parsley.

1. Heat oven to 325 degrees Fahrenheit and coat a 12-cup muffin tin with nonstick spray
- 1 cup buttermilk*
- 1/3 cup olive oil or melted coconut oil
- 1/3 cup honey
- 1 large egg
- Zest of 1 lemon
- 1 1/2 cups wheat bran
- 1 cup white whole wheat flour or regular whole wheat flour
- 1 1/2 teaspoons aluminum-free baking powder
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon fine-grain sea salt
- 6 ounces fresh or frozen blueberries
- 2 teaspoons turbinado sugar, AKA raw sugar
