Oven Roasted Parmesan Potatoes

Preheat oven to 400 degrees F (200 degrees C)
- cooking spray
- 1 teaspoon vegetable oil, or as needed
- 2 tablespoons freshly grated Parmesan cheese
- 1/2 teaspoon salt

Mexican Quinoa Stew

1. In a medium Dutch oven or soup pot, warm the oil over medium heat
- 1 teaspoon coconut oil (I opted to use 1 tablespoon olive oil instead)
- 1 medium yellow onion, chopped
- 2 celery stalks, chopped
- 3 carrots, chopped
- 4 cloves garlic, pressed or minced
- 3 1/2 cups water
- 1 large can (28 ounces) diced tomatoes
- 1 1/2 cups cooked black beans or 1 can (15 ounces) black beans, rinsed and drained
- 1 1/2 teaspoons ground cumin
- 2 teaspoons fine sea salt
- 1/2 cup quinoa (dry/uncooked)
- 1/4 cup chopped fresh cilantro
- Freshly ground black pepper
- NOTE; Optional garnishes (my ideas): extra chopped cilantro, small wedges of lime, diced avocado, crumbled tortilla chips, grated cheese, sour cream...
Roasted carrots & broccoli

1. Preheat oven to 400 degrees
- 3-4 green onions, roughly sliced
- 1 head broccoli, cut into bite-sized pieces
- 3 medium carrots, roughly sliced
- 2 cloves garlic, minced
- 1 tablespoon olive or coconut oil (extra virgin, pressed)
- 1/4 cup white cheddar cheese (optional)
- 1/2-1 tablespoon basil, chopped (optional)
- salt and pepper to taste
Apple Oatmeal Pancakes

1. Place all the ingredients except for the grated apple in your blender
- 1 cup apple sauce
- 1 cup old-fashioned oats (gluten free if necessary)
- 1 egg
- 2 tablespoons coconut oil or butter, melted
- 1 tablespoon baking powder
- 1 teaspoon maple syrup or honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup grated tart apple (1 large honeycrisp apple was more than plenty for me)

- 4 lb Roma Tomatoes
- 2 Yellow Onions diced
- 2 Stalks Celery diced
- 5-6 Cloves Garlic minced
- 1/3 Cup Fresh Parsley chopped
- 1/3 Cup Fresh Basil chopped
- 1 Tbs Dried Oregano
- 1/4 Tspn Red Pepper Flakes
- 1 Tbs Sugar
- 1/2 Cup Dry Red Wine (Preferably Cabernet Sauvignon or Merlot)
- 1/4 Cup Olive Oil
- Salt and Pepper
- Makes 4-5 cups
Tomato Basil Chicken Stew *****GG

Heat oil in a large stockpot over medium-high heat
- 1 Tbsp. olive oil
- 1 small white onion, chopped
- 2 carrots, peeled and diced
- 2 stalks of celery, diced
- 4 cloves garlic
- 2 cups of chicken stock
- 2 (28 oz.) cans whole tomatoes (with their juices)
- 1 (14 oz.) can cannelinni beans
- 1 lb or more of brined cubed chicken
- 2 handfuls baby spinach or broccoli
- 1/4 cup roughly chopped fresh basil
- 1/2 tsp rosemary
- 1 tsp oregano
- 1/4 cup fresh Italian parsley
- Salt to taste
- 1/2 tsp. black pepper
- 1/4 tsp. crushed red pepper flakes
