Braised Potatoes with Tomatoes and Onions

Ingredients
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 1/2 cups peeled, seeded, and chopped fresh or canned tomatoes
- 1 teaspoon dried oregano
- 2 pounds potatoes, such as Yukon Gold, peeled and cut into bite-size pieces
- Salt and freshly ground pepper
- 1/2 cup freshly grated Parmigiano-Reggiano

Step 1
In a medium skillet, cook the onions in the oil over medium heat until tender and golden, about 8 minutes.
Stir in the tomatoes and oregano.
In the slow cooker, combine the onion mixture, potatoes, and salt and pepper to taste. Stir well. Sprinkle with the cheese. Cover and serve.
