Braised Potatoes with Tomatoes and Onions

Ingredients

  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 1/2 cups peeled, seeded, and chopped fresh or canned tomatoes
  • 1 teaspoon dried oregano
  • 2 pounds potatoes, such as Yukon Gold, peeled and cut into bite-size pieces
  • Salt and freshly ground pepper
  • 1/2 cup freshly grated Parmigiano-Reggiano

Step 1

In a medium skillet, cook the onions in the oil over medium heat until tender and golden, about 8 minutes.

Stir in the tomatoes and oregano.

In the slow cooker, combine the onion mixture, potatoes, and salt and pepper to taste. Stir well. Sprinkle with the cheese. Cover and serve.
