Fresh Caprese Quinoa Salad

1. In a medium sized pan, bring 1C water and 1/2C quinoa to a rolling boil
- 1/2 C quinoa
- 8 oz fresh mozerella cut into bite size pieces
- 1 carton grape tomatoes, halved
- fresh basil chopped
- 2 T olive oil
- salt & pepper

- 2/3 cup white sugar
- 1/4 cup unsalted butter, at room temperature
