Chocolate Chip Mocha Icebox Cake

Beat softened cream cheese
- 8 oz cream cheese, softened
- 1 cup mocha latte iced coffee
- 3 cups powdered sugar
- 16 oz whipped topping
- 4 tablespoons unsweetened cocoa powder
- 8-9 full graham cracker sheets
- 30-35 small, crisp chocolate chip cookies
- 1 cup mini chocolate chips
Julienne Carrot Casserole

Creamy carrots
- Produce
- 2 lbs Carrots
- 2 tbsp chopped Green Onion
- Condiments
- 2 tbsp Horseradish, prepared
- 3/4 cup Mayonnaise
- Baking & Spices
- 1/2 tsp Pepper, freshly ground
- 1/4 tsp Salt
- Bread & Baked Goods
- 1 1/2 cup Breadcrumbs or panko, fresh
- Dairy
- 3/4 C Sour Cream
Chicken Parmesan Lasagne

Combine flour and durum semolina and make a well in the center
- For the pasta:
- 6 boneless skinless chicken breasts, grilled and diced (or sauteed in olive oil and garlic until cooked)
- 1 1/2 pounds grated mozzarella
- 2 cups freshly grated Parmesan
- 4 large sliced tomatoes
- For the Ricotta filling (optional)
- 2 cups ricotta cheese
- 2 eggs
- 1 tsp nutmeg
- Salt and pepper to season
- You can use store bought (fresh if possible) or make your own.
- 4 1/2 cups durum semolina
- 2 cup all purpose flour
- 6 large eggs, room temperature.
- For the sauce:
- 1/2 head fennel sliced
- 2 lbs chopped roma tomatoes
- 2 tbsp olive oil
- salt and pepper to season
Whole Wheat Brown Sugar Banana Bread Pancakes.

n a large bowl, combine flour, baking powder, sugar, salt, cinnamon, and nutmeg in a large bowl
- 2 cups whole wheat pastry flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2/3 cup milk
- 1 tablespoon vanilla extract
- 3 large ripe bananas, mashed
- 2 tablespoons butter, melted
- Vanilla Maple Glaze
- 1/2 cup maple syrup
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Combine all ingredients in a bowl and stir until smooth. Pour over pancakes.
Chili Cheese Breakfast Bake

Mix all but cheddar cheese together
- Preheat oven to 350
- 8 eggs beaten until frothy
- 1/4 C flour
- 1 tsp baking powder
- 1 TBS Cilantro
- 1/4 C shredded Monterey Jack Cheese
- 1/4 C shredded mild cheddar
- 2 4 oz cans chopped green chiles
- 24 oz carton cottage cheese (low fat)
- 1/2 to 1 cup mushrooms, optional
- Mix all ingredients, BUT RESERVING the mild cheddar cheese to sprinkle on top
- 9 X 9 pan greased
Dill Ricotta Biscuits

Preheat oven to 375 Stir all dry ingredients together
- 4 C all purpose flour (can use part multi-grain)
- 1 TBS sugar
- 1 TBS Baking Powder
- 1 1/2 TSP salt
- 1 TSP Baking Soda
- 1/2 C butter, cut up
- 1 C buttermil
- 1 C part-skim Ricotta cheese
- 3 TBS chopped, fresh dill
