- 1/2 pound sliced fresh mushrooms

- 1/2 teaspoon salt, divided
- 2 teaspoons olive oil
- 1 can (15 ounces) solid-pack pumpkin
- 1/2 cup half-and-half cream
- 1 teaspoon dried sage leaves
- Dash pepper
- 9 no-cook lasagna noodles
- 1 cup reduced-fat ricotta cheese
- 1 cup (4 ounces) shredded part-skim mozzarella cheese
- 3/4 cup shredded Parmesan cheese
Fluffy Four Grain Pancakes

- 1 cup whole wheat flour
- 3/4 cup whole wheat pastry flour (can substitute with all-purpose)
- 1/3 cup stone-ground cornmeal
- 1/4 cup quick-cooking rolled oats
- 2 tsp baking powder
- 3/4 tsp baking soda
- 1 tsp salt
- 2 tbsp sugar
- 1/2 tsp cinnamon, ground
- 1/4 tsp nutmeg, ground
- 1 1/2 cups soy milk (feel free to substitute with almond milk)
- 1/2 tsp vinegar
- 4 tbsp canola oil
- 1/4 cup maple syrup
- 6 tbsp flax powder whisked together with 6 tbsp water
Cranberry Pudding

VERY rich, "traditional" Christmas day dessert
- Single recipe
- 1 1/2 C cranberries (grind)
- 1 1/2 C flour
- 1/2 C molasses
- 1/2 C sugar
- 2 tsp baking soda
- 1 egg
- 1/3 C hot water
- Sauce
- 1/2 C whole cream
- 1 C sugar
- 1/2 C butter
- 1 tsp vanilla
- Cook over medium heat until smooth and slightly thicker

Preheat oven to 350 Combine eggs, sugar, oil, water and pumpkin
- 2 eggs
- 1 1/2 C sugar
- 1/3 C water
- 1/2 C oil
- 1 C pumpkin
- 1 2/3 C unsifted flour
- 1/2 tsp cloves
- 1/2 tsp cinnamon
- dash nutmeg
- dash allspice
- 1/4 tsp baking powder
- 1 tsp baking soda
- 3/4 tsp salt
