Cinnamon Apple Walnut Salad

Mix yogurt, SF syrup, and cinnamon together till well blended
- 3 oz. Greek Yogurt
- 1 Tablespoon Sugar Free Torani Syrup
- (any flavor, I used SF Sugar Free Cinnamon Vanilla)
- dash Cinnamon
- 1 Apple (Pink Lady, Gala or Fuji are my favs), chopped
- 2 Tablespoons Walnuts, chopped
- 1 Tablespoon Dried Cranberries
Super Duper Cocoa-Rific Coffee

Put all dry ingredients in a tall glass
- 2 teaspoons malted milk powder
- 1 teaspoon unsweetened cocoa
- 1 teaspoon instant coffee granules
- 1 packet sugar substitute
- 14 cups fat-free milk
- 1 tablespoon liquid non-dairy creamer
- 5-8 ice cubes or 1 cup crushed ice
- fat free whipped cream

Preheat oven to 350. Mix all ingredients together
- 1 cup Cooked Quinoa (I prefer Red)
- 5 Eggs, beaten
- 2-3 Green Onions, diced
- 1/4 lb (about 4 slices) Low Sodium Ham, diced fine
- 1/4 cup Shredded Cheese
- 2 Tablespoons Parmesan Cheese
- 1 Tablespoon Chives
- 1 teaspoon Oregano
- 1/4 teaspoon Salt

- 1 t. vanilla
- 1/4 t. cinnamon

Spring Peas With Dates and Walnuts

- Kosher salt
- 2 cups shelled fresh English peas or thawed frozen peas (about 10 ounces)
- 1 pound sugar snap peas, trimmed
- 1/4 pound snow peas, trimmed and thinly sliced
- 1 tablespoon extra-virgin olive oil
- 1 medium shallot, thinly sliced
- 1/4 cup chopped walnuts
- 1/4 cup chopped pitted dates
- Pinch of cayenne pepper
- 2 teaspoons walnut oil

Preheat oven to 350° and line two baking sheets with parchment paper or silicon nonstick liners
- 1 large egg
- 1/2 cup butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup Truvia for Baking, sugar replacer
- 1 1/2 cups rolled oats, not instant or quick cooking
- 3/4 cup sliced almonds
- Nonstick cooking spray
