Pimento Cheese Spread

Mix all .except shredded cheese with a mixer
- 3 oz. cream cheese - room temperature
- 3 cups low fat shredded cheese
- 3 T.diced pimentos with juice
- 2 T. pickle relish (optional)
- 1/2 t. onion powder
- 1/2 cup light mayonnaise
- 2 scoops unflavored protein powder
Spring Fruit Compote

Drain fruits well. Put fruits in a 5-6 quart slow cooker with brown sugar, orange juice and cinnamon
- 2 (15 oz.) cans sliced peaches
- 2 (15 oz.) cans dark red cherries
- 2 (15 oz.) cans sliced pears
- 2 (15 oz.) cans apricot halves
- 1/2 cup brown sugar, packed
- 1/2 cup orange juice
- 1 t. cinnamon

Combine Crisco and brown sugar; beat at medium speed until well blended

- 1 cup butter flavored Crisco
- 1 cup brown sugar, packed
- 2 eggs
- 1 tsp. vanilla
- 3 cups flour

- 1/2 tsp. salt
- 1 1/2 tsp. cinnamon

- 3 cups water

Raspberry Vinaigrette Salad Dressing

- 1/4 cup Splenda sweetened sugar free raspberry preserves (Polaner or Smucker's)
- 1 T. red wine vinegar
- 1 t. Splenda
- 1 T. lemon juice
- few drops Tabasco
- 1 T. Dijon mustard
- 1/4 cup olive oil
- 1/4 t. seal salt
- few grinds of black pepper
