- 1/2 teaspoon vanilla

- 1 cup mayonnaise
- 2 Tbsp apple cider vinegar
- 2 tsp Dijon mustard
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp sugar
- 2 cups dry elbow macaroni, cooked and cooled
- 4 slices thick-cut bacon, diced, cooked, and fat drained
- 1/2 cup frozen peas, defrosted
- 1/4 cup thinly-sliced scallions
- 1 cup halved cherry tomatoes
- 2 cups grated extra-sharp cheddar cheese
- 1 cup crumbled Feta
Creamy Mashed Potato Bake

Cook potatoes until fork tender
- 6 medium potatoes, cooked and diced
- 1/4 - 1/2 cup milk
- 8 oz. cream cheese
- 1 cup sour cream
- 1 T. minced parsley
- 1/4 t. garlic powder
- 1/2 cup shredded Cheddar cheese
Potato Soup

Melt butter. Add onion, carrot, celery and garlic
- 3 Tbsp. butter
- 1 onion, diced
- 1/2 cup diced carrot
- 1/2 cup diced celery
- 1 garlic clove, minced
- 4 cups diced potato
- 2 cups chicken broth
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. parsley flakes
- 1 cup milk, or more
Chocolate Almond Fudge Protein Ice Cream

Mix together milk, protein, pudding mix and syrup
- 1 cup Vanilla Soy Milk (or Regular Milk)
- 2 scoops Chocolate Protein Powder
- 1 Tablespoon Sugar Free Torani Syrup (any flavor I used SF Chocolate)
- 2 Tablespoons Sugar Free Chocolate Fudge Jello Pudding Mix, dry
- a Tablespoon or so of Toasted Almonds, optional

(makes two 3 oz. ramekins or three 2 oz
- 2 oz. deli sliced corned beef, sliced into strips
- 2 oz. pastrami (I used Jenny-O turkey pastrami), cut into strips
- OR you can simply use 4 oz. of whichever of the above two you like best!
- 1/2 c. onions, either finely diced or in slivers
- 2 slices reduced fat Swiss cheese
- 3 tbsp. Greek yogurt
- 2 heaping tablespoons reduced fat Thousand Island (or Russian) dressing
- 1/4 c. canned sauerkraut

- 1/4 cup butter, softened
- 1 cup sugar
- 1 cup mashed banana, 3 medium
- 1 cup sour cream
- 2 eggs
- 2 1/4 cups flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped walnuts
High Protein Greek Yogurt Cubes - Shelly's

Flavor the yogurt with any of the options
- Optional additions:
- 3 oz. plain Greek yogurt
- ice cube tray
- protein powder
- chopped fruit
- 1 T. SF syrup
- SF pudding mix
- powdered peanut butter
- cocoa powder
French Breakfast Muffins

Preheat oven to 350F. In a medium-large bowl, sift together all dry ingredients
- 1/3 c. butter, melted
- 1/2 c. sugar
- 1 egg (preferably room temperature)
- 1 1/2 c. all purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. nutmeg
- 1/2 c. milk
- Topping (option: cut topping in half*)
- 1/2 c. sugar
- 1/2 c. butter, melted
- 1 tsp. cinnamon
