Creamy Mashed Potato Bake
- 6 medium potatoes, cooked and diced
- 1/4 - 1/2 cup milk
- 8 oz. cream cheese
- 1 cup sour cream
- 1 T. minced parsley
- 1/4 t. garlic powder
- 1/2 cup shredded Cheddar cheese
Cook potatoes until fork tender. Heat oven to 325 degrees. Spray a baking dish with cooking spray. Combine all ingredients except cheese; mix with electric mixer until smooth. Spoon potato mixture into baking dish; cover and bake 30-40 minutes.
Remove from oven and sprinkle with cheese. Bake 5-10 minutes or until cheese melts. Serve immediately.
