- 8 oz. plain yogurt
- 2 Tbl. sugar free instant vanilla pudding mix
- 1 Tbl. sugar free caramel syrup (Davinci's)
Italian Sweet Ricotta Pie

For Italians, Easter is both a religious and culinary celebration
- 3 eggs
- 1/2 cup Truvia or 3/4 cup Splenda Granulated
- 1 cup Half & Half (do not use fat free version as it has starch and gums)
- 1 teaspoon pure vanilla extract
- 1 teaspoon cornstarch
- 1 pound POLLY-O original or part skim milk ricotta cheese
- 1 cup canned crushed pineapple, well drained and squeezed of moisture
- Ground cinnamon
Apple Pie Shake

Blend all ingredients together
- 8 oz. milk
- 1 scoop vanilla protein powder
- 1 T. SF apple butter
- 2 T. cinnamon SF syrup
- Dash of apple pie spice
- Ice
Brown Sugar Substitute

Add molasses to the sugar and stir until it is thoroughly and evenly mixed in
- 1/8 cup mlasses
- 3 cups sugar
Canadian Bacon & Sausage Stuffed French Bread

Preheat oven to 400 degrees
- 1 loaf French Bread
- 1/2 cup butter or spread, softened
- 1/2 cup cream cheese
- 1 T. onion flakes
- 1 T. poppy seeds
- 1 T. dried parsley
- 4 slices Swiss cheese, cut into 8 triangles
- 8 pieces Canadian bacon
- 1 to 1 1/2 cup pre-cooked sausage crumbles

Classic buttery Christmas cookies
- 1 cup butter softened
- 1/2 cup Truvia Baking blend sugar replacer
- 3 egg yolks
- 1 teaspoon vanilla
- 2 1/2 cups flour
- decorative sanding sugar - Martha Stewart & Williams Sonoma have beautiful ones
Chocolate Covered Cherry Protein Balls

In a bowl, mix all ingredients EXCEPT chocolate chips; stirring until everything is a uniform mixture
- 1/2 cup natural creamy peanut butter (only ingredients peanuts & salt)
- 1/2 cup rolled oats
- 2 T. raw honey
- 1 scoop vanilla protein powder (about 1/3 cup)
- 1/3 cup dried cherries, roughly chopped
- 1 T. chia seeds
- 1/3 cup dark chocolate chips
Protein Power Balls - Nik's

Combine Fiber One crumbs, protein powder, sweetener (if you're using it - in my first few batches I did
- 1 c. Fiber One Original cereal, crushed into crumbs
- 1 scoop vanilla protein powder
- 1/4 tsp cinnamon
- 4 tbsp peanut butter (more about this in a moment)
- 3-4 tbsp milk
- Optional: Splenda or other no-calorie sweetener, to taste
Nik's Nutty Apple Protein Baked Oatmeal (or Bars)

Pre-heat your oven to 350 degrees
- Wet Ingredients:
- 1 c. quick oats (Folks have asked about steel cut and regular oats. I do not recommend. Protein cooks FAST. Unless the oats can keep up the texture isn't going to be that great. But I welcome you to prove me wrong!)
- 3 scoops of either vanilla or unflavored protein powder (I used this unflavored kid)
- A generous pinch of salt
- 1/2 tsp. cinnamon
- 1.5 c. milk
- 1/4 c. sugar-free pancake syrup
- 2 eggs, beaten or 1/2 c. Egg Beaters
- 1/4 c. PB2 powdered peanut
- 1/4 c. natural peanut butter (I used Naturally More)
- NOTE: If you don't have access to a good, healthy peanut butter but DO have PB2, use about 3/4 c. of it. If you have peanut butter but no PB2, use 1/2 c. of the peanut butter.
- Chunky Stuff
- 1 small apple (I used a honeycrisp) cut into small cubes
- 1/4 c. chopped walnuts
Dinner Rolls One Hour!)

I like to use my oven as an "incubator", which hastens the proofing of the dough
- 1/8 cup sugar
- 1 teaspoon salt
- 1-1/2 tablespoons butter
- 1-1/2 packages (or 3-1/2tsps.) of dry active yeast
- 3/4 cups warm water (105F – 115F)
- 2-1/2 to 3 cups all-purpose flour
- 2 tablespoons butter, melted (optional for brushing onto baked rolls)
