French Canadian Tourtiere

Method: Mix together pork, beef, onions and seasonings
- 4 lbs medium ground beef
- 2 lbs lean ground pork
- 2 medium onions, finely chopped
- 3 cloves of garlic, chopped
- 1 T savory (preferably leaves, crumbled)
- 1 t thyme
- 2 cups beef broth
- salt and pepper to taste

Mushroom Sauce

In a large skillet, melt the butter over medium heat
- 2 tablespoons butter
- Four 4-ounce packages gourmet blend mushrooms, sliced
- 4 cloves garlic, minced
- 1 shallot, minced
- 1 cup beef broth
- 1/2 cup heavy whipping cream
- 1/2 teaspoon dried thyme
- Salt and fresh ground black pepper
Baked Eggs

Place l teaspoon butter or margarine in each cup of a 6-cup non-stick muffin tin
- 6 teaspoons butter or margarine
- 6 large eggs
- 6 teaspoons Cheddar cheese - grated
- 6 teaspoons bacon - cooked and crumbled
- 6 teaspoons parsley - finely minced
- Worcestershire sauce - to taste
- Creole seasoning - to taste
Sauce Velouté For Salmon

1. Melt the butter in a saucepan over a medium heat and gently fry the shallot
- 30 g butter
- 1 shallot, finely chopped
- 2 stalks parsley, left whole
- 1 bay leaf
- 150 ml dry white wine
- 120 ml fish stock
- 175 ml double cream
- black pepper
Pull-Apart Pizza Muffins

1. Preheat the oven to 350 degrees
- 1/3 cup olive oil
- 26 oz frozen dinner roll dough, thawed
- 2 1/2 cups shredded Mozzarella
- 1/2 cup Parmesan cheese
- 2 tablespoons Italian seasoning
- 6 oz sliced pepperoni, cut into quarters
Lemon Dill Sauce

In a saucepan, combine the shallots, garlic, wine, and lemon
- 1/2 cup minced shallots
- 1 teaspoon minced garlic
- 1/2 cup dry white wine
- Juice of one lemon
- 1/4 cup chopped fresh dill
- 1 teaspoon Dijon mustard
- 1/2 cup heavy cream
- 5 tablespoons unsalted butter, cubed
- Salt and pepper
Beef Machaca

This is a basic machaca recipe
- Marinade:
- 1/4 cup Worcestershire sauce
- Juice of two limes
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup vegetable oil or olive oil
- Machaca:
- 2-3 lb Chuck Roast or Skirt Steak, trimmed and cut into lb portions.
- 1 Large Texas Sweet Onion (yellow onion) diced
- 1/2 green bell pepper diced
- 4 cloves of garlic, minced or pressed
- 1 Fresh Jalapeno Pepper, minced
- 1 14oz can diced tomatoes or tomatoes with green chilies
- 1/4 cup beef broth
- 1 Tb dried oregano
- 1 Tb ground cumin
- 1 teaspoon hot pepper sauce such as Tabasco
- salt and pepper to taste
- Vegetable oil for searing the beef
Judy's Rhubarb Strawberry and Sour Cream Pie

Method: Pre-heat oven to 450˚ F
- 1-1/4 cups white sugar
- 1/4 cup flour
- 1 cup sour cream
- 3-1/2 cups diced rhubarb
- 1-1/2 cups sliced strawberries
- 1-10-inch unbaked pastry shell
- 1/2 cup brown sugar, packed
- 1/2 cup flour
- 1/4 cup cold butter

- 4 (4-oz.) cube steaks
- 38 saltine crackers, crushed
