- 6 eggs
- 1/2 c grated gruyere
- 1/4 c cream cheese
- 1/4 tsp salt
- 3 slices cooked bacon, cut in halves
- Extra Equipment: 6 4oz/125ml canning jars with 2-part screw-on lids
Tater Tot Casserole

Directions Preheat oven to 375 degrees
- 2 lbs. ground beef
- 1 white onion, chopped
- 1/2 C. water
- one 10 3/4-oz. can cream of mushroom soup
- 2 C. frozen vegetables of your choice
- 1 lb. frozen tater tots
- pepper, to taste
Cuban Garbanzo Bean Salad

Emulate Martha Stewart by serving the salad chilled on a lettuce leaf!
- 1 green pepper diced and blanched
- 1 red bell pepper diced and blanched
- 1 cup sweet yellow onion, diced
- 2 (15-ounce) cans garbanzo beans
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 1 teaspoon ground cumin
- 3 garlic cloves, minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Italian Bread Dipping Oil

Combine olive oil, vinegar, basil, parsley, oregano, garlic, salt and pepper
- 1 cup extra virgin olive oil
- 1 T balsamic vinegar
- 1 T chopped fresh basil
- 1 T chopped fresh parsley
- 1 T chopped dried oregano
- 2 garlic cloves, minced
- 1/2 t salt
- 1 t freshly ground coarse black pepper
- dash of red pepper flakes
- 1 T finely chopped sundried tomatoes (optional)
Tiffin No-Bake Cake

This is a nice easy recipe for Tiffin
- Put all these in a bowl or pan and microwave or heat on low for a couple of minutes to melt:
- 100 g butter/hard margarine (not low-fat, as it won't set)
- 25 g soft brown sugar
- 3 tbsp cocoa
- 4 tbsp golden syrup
- Then add:
- 225 g crushed digestive biscuits
- 150 g raisins (or other dried fruit)
- Mix well.
Spinach Salad with Pepper Jelly Dressing

Directions In a small bowl, whisk together the pepper jelly, olive oil, salt and mustard to make the dressing
- Ingredients
- 3 tablespoons mild pepper jelly
- 2 tablespoons olive oil
- 1/8 teaspoon salt
- 1/8 teaspoon Dijon mustard
- 2 cups baby spinach leaves
- 2 ounces goat cheese, sliced
- 2 tablespoons chopped walnuts
Rice Pilaf

Melt the butter or margarine in a medium sized saucepan
- 1/3 cup butter or hard margarine
- 1 cup, lightly packed, finely diced leeks or scallions
- 1 cup finely diced sweet peppers, in a mixture of colours
- 2 or 3 cloves of garlic, minced (or more, depending on your tastes)
- 1 1/2 tablespoon chicken bouillon powder
- 1 cup long grain white rice (I use a parboiled rice)
- 2 cups (slightly less than 2) water
- salt and pepper to taste
New Orleans Fish Meuniere

Sauce: Combine sauce ingredients in a medium sized saucepan
- Sauce:
- 1 peeled and sliced lemon
- 2 bay leaves
- 1 small bottle Worcestershire Sauce
- 1/4 cup heavy cream
- Fish:
- fish fillets - any type of firm white fish
- 1/2 cup andouille sausage, cut into small cubes
- 1/2 cup parmesan cheese
- 1/2 cup bread crumbs
