- 3-4 lb top round roast, trimmed of fat
- 1 jar sliced hot pepperoncinis, including pickling juice
- 1/2 c white vinegar
- 1-1/2 - 2 c water
- 1 pkg Good Season Italian dressing mix*
- 2 T dried oregano
- 1 T each: dried parsley, onion powder & lemon pepper (opt)
- 1/2 T each: garlic powder & sugar (or splenda)
- 1 t each: black pepper, dried basil, red pepper flakes
- 1/4 t each: dried thyme & celery salt

Method: Beat together 5 egg yolks and 2 egg whites until stiff
- 5 eggs
- 1-1/4 cups white sugar
- 3/4 cup lemon juice
- 1 box vanilla wafers
- 1 small package Nutrifil
- 1 can crushed pineapple
- icing sugar
Jim's Maple Syrup Pie

Pour into an unbaked pie shell and bake at 400˚F for 40 minutes or until filling is set
- Method:
- Beat slightly: 2 eggs
- Mix together and blend in: 3/4 cup brown sugar
- or stirred maple sugar
- 2 T flour
- Stir in: 1 cup maple syrup
- 2 T melted butter
- 1/2 cup chopped pecans
- 1 t vanilla
- 1/2 t salt
Ambrosia From The Deep

- Topping:
- 3 cups of lobster meat and 3 cups of king crab meat, diced quarter to half inch
- 1 medium onion, diced and sautéed until carmelized; add 1 t sugar and 1/2 t salt
- 1/4 cup diced pimiento
- 1 t seafood seasoning (e.g., Emeril’s)
- 2 packets Knorr Hollandaise Sauce (prepared but not cooked)
- 1 //2 pound Gruyere cheese, grated
- 2 cups breadcrumbs, sautéed in 1 T olive oil and 1 T butter

- 1-1/2 cups graham wafer crumbs
- 2 T sugar
- 1/3 cup melted butter
- Filling
- 4 eggs
- 3/4 cups sugar
- 1 cup whipping cream
- 1/8 t salt
- 3 T fresh lemon juice (1 lemon)
- 1 t vanilla
- 2-1/2 T flour
- 2 pounds cream cheese (4 large packets) at room temperature
French Dacquoise Cake

Directions 1.Preheat oven to 250 degrees
- 1 1/2 cups confectioners' sugar, plus more for dusting
- 1/3 cup Dutch-process cocoa powder
- 6 large egg whites
- 1/8 teaspoon cream of tartar
- 3/4 cup granulated sugar
- Ingredients Frosting
- Makes 4 cups
- 1 1/2 tablespoons instant espresso powder
- 2 tablespoons hot water
- 5 large egg whites
- 1 1/4 cups sugar
- 1 pound (4 sticks) unsalted butter, cut into pieces, room temperature
- Directions
- 1 .In a small bowl, dissolve espresso powder in 2 tablespoons hot water; set aside. In the heatproof bowl of an electric mixer, combine egg whites and sugar. Set the bowl over a pan of simmering water.
- 2 .Transfer mixture to the bowl of an electric mixer fitted with the whisk attachment, mix on low speed, gradually increasing to high speed, until stiff, glossy peaks form, about 10 minutes.
- 3 .With machine running on low speed, add butter to the egg whites, beating until smooth. Add the espresso mixture, and continue beating until incorporated.

DIRECTIONS Preheat oven to 350
- 1/2 lb bacon – chopped
- 1 large onion – small dice
- 2 large poblano chilies – seeded and small dice
- 2 large jalapeno – seeded and finely minced
- 16 oz creamy goat cheese – at room temp
- 1 cup Daisy Sour Cream
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 2 cups cheddar cheese, shredded
- 1 lime, juice and zest
- 1 cup panko breadcrumbs
- 1 bunch cilantro – finely minced
- 2 tablespoons butter, melted
- Tortilla chips or crackers for serving
