Ingredients

  • 1-1/2 lbs. sausage, casings removed
  • 1/2 lb. cubed smoked sausage
  • 1 cup diced ham
  • 1 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup celery
  • 1/2 t cajun seasoning
  • 1 t hot sauce
  • 4 T flour
  • beef broth
  • 1/4 t oregano
  • 2 t parsley
  • 1/4 cup cheddar cheese, shredded
  • 2 T minced green onions
  • salt and pepper
  • 2 (1-lb.) frozen bread dough, thawed

Method:

Cook breakfast sausage and smoked sausage in frying pan until they start to brown; drain. Add ham, onion, bell pepper, celery, cajun seasoning and hot sauce. Sauté for 10 minutes. Add flour and continue to cook for 5 minutes, scraping bottom of pan with spoon. Add beef broth, oregano and parsley and cook for 10 minutes, until meat mixture is thick. Add cheese and green onions and cook for 5 minutes. Cool mixture in refrigerator.

Roll bread dough into rectangles about 4x8 inches. Divide filling into four parts; spread two strips of filling lengthwise onto each rolled out bread dough, leaving space between the two strips of filling. Fold about 1 inch of each bread rectangle toward the center. Then, roll the dough, using the long side, into a cylinder, like a cigar. Seal edges with dabs of water.

Bake for 40 minutes. Allow loaves to cool slightly before cutting into slices.
