Classic Greek Spinach

Heat olive oil in a medium saucepan over medium heat
- 1 cup olive oil
- 2 onions, chopped
- 1 (10 ounce) package frozen chopped spinach, thawed and drained
- 2 large tomatoes, coarsely chopped
- 3 cups water
- 1 clove garlic, minced
- 1 tablespoon tomato paste
- 1 cube beef bouillon
- salt and pepper to taste
- 1/2 cup uncooked long-grain white rice
Homemade Green Chile Sauce

You can make this sauce a day ahead
- 7 to 8 ounces tomatillos (about 5 medium)
- 1 quart homemade or low-salt chicken broth
- 1-1/4 to 1-1/2 pounds fresh Anaheim chiles (6- to
- 8-inch chiles), roasted, peeled, and seeded & coarsely chopped
- 2 teaspoons minced yellow onion
- 1 teaspoon dried oregano (or 2 teaspoons chopped fresh oregano)
- 1 clove garlic, minced
- 1/2 teaspoon kosher salt; more to taste
- 1/4 teaspoon ground white pepper
- 2 tablespoons cornstarch, dissolved in 2 tablespoons water
- Your favorite hot sauce (optional)
Buttermilk Biscuits

Method: • Preheat oven to 500˚F
- 5 cups sifted all-purpose flour, measured after sifting
- 1 T plus 1/2 t baking powder
- 1 T kosher salt
- 1/2 cup (1/2 lb.) packed lard, chilled
- 1-1/4 cups buttermilk
- 3 T unsalted butter, melted.
Glaze for Poultry

Combine all ingredients and gently heat on stove
- 1 c. honey
- 2 tbsp. orange juice, concentrate
- Rind of 1 orange, grated
Jim's Canadian Bacon and Pineapple Pizza

Set oven at 425 degrees F for thick crust; 400 degrees F for thin crust
- 1 package (6 oz) sliced provolone/mozzarella cheese
- 1 package (5 to 6 oz) sliced Canadian bacon
- 1 can (8 oz) crushed pineapple or chunks in unsweetened juice, well drained on paper towels
- 1/2 cup thinly sliced red onion
- 1/2 cup chopped green bell pepper
- 1/2 cup shredded Cheddar cheese (2 oz)
Chocolate Beet Cake Recipe

Don't be turned off by the beets! You won't taste them at all, and they make the cake very moist
- 1-3/4 cups all-purpose flour
- 1-1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 can (15 oz.) whole or quartered beets (not pickled), drained (reserve liquid)
- 1-1/4 cups granulated sugar
- 1 cup vegetable oil
- 1/2 cup juice from beets
- 3 large eggs
- 1 teaspoon vanilla extract
- 4 squares (1 ounce each) unsweetened chocolate, melted
- 1 cup semi-sweet chocolate chips
- Prep Time: 15 minutes
- Cook Time: 30 minutes
- Total Time: 45 minutes
- Yield: 36 to 48 servings
Bourbon Bacon Marmalade

Bacon is one of the few things that I adore with the same enthusiasm as whiskey
- 2 pounds smoked bacon, cut into 1-inch pieces
- 2 medium yellow onions, chopped
- 3 cloves garlic, chopped
- 1/2 cup bourbon whiskey (I recommend Old Charter 101)
- 6 Tablespoons brown sugar
- 1/2 cup apple cider vinegar
- 1/2 cup maple syrup
- 2 cups freshly brewed coffee
- 6 dashes Tabasco Chipotle Pepper Sauce
- 6 grinds of fresh black pepper
Bisquick Coffee Cake

Mix all ingredients. Sprinkle Topping over the top
- 2 cups Bisquick
- 2 tablespoons granulated sugar
- 1 egg
- 2/3 cup water or milk
Japanese Cucumber Salad

Tip: To toast sesame seeds, heat a small dry skillet over low heat
- 2 medium cucumbers or 1 large english cucumber
- 1/4 cup rice vinegar
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 2 tablespoons sesame seeds, toasted (see Tip)
Himmel und Erde - Potatoes with Apples

In a heavy 12-inch skillet combine the sugar, 1 teaspoon of the salt and the black pepper in 2 cups of water
- 1 tablespoon sugar
- 2 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 2 cups cold water
- 9 medium-sized boiling potatoes (about 3 pounds), peeled and cut into 1-inch cubes
- 1 pound tart cooking apples, peeled, cored and quartered
- 1/2 pound lean bacon, cut into l/4-inch dice
- 2 medium-sized onions, peeled and sliced 1/8-inch thick and separated into rings
- 1 teaspoon cider vinegar
