Knoblauchcremesuppe - Cream of Garlic Soup

Heat the olive oil and butter; add the onions and garlic and slowly simmer until golden, about 30 minutes
- bouquet garni:
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 pounds onions, about 4, chopped
- 2 cups garlic cloves, about 4 large heads, chopped
- 2 peeled and chopped russet potatoes
- 2 quarts Chicken Stock or canned low-sodium chicken broth
- 1 cup white wine
- splash of brandy
- 1/2 loaf day-old French bread (about 1/4 pound), cut into chunks
- 6 parsley stems,
- 9 sprigs fresh thyme or 1 1/2 teaspoons dried,
- and 1 bay leaf
- 1 1/2 teaspoons salt
- 2 cups half-and-half
- 2 cups heavy cream
- 1/4 teaspoon fresh-ground black pepper
- Croutons, optional

Chef Pablo and I preented this recipe at the Annual Ottawa Herb Fest and won first prize
- 2 teaspoons (10 mL) red chili flakes
- ■ 3 tablespoons (50 mL) ground pasilla pepper (mild chili), available in specialty food stores*
- ■ 1-1/2 teaspoons (7 mL) ground cinnamon
- ■ Pinch, ground cloves
- ■ 1 cup (250 mL) plus 1 tablespoon (15 mL) granulated sugar, divided
- ■ 2 tablespoons (25 mL) salt
- ■ 12 large shrimp or prawns, shelled but tails on
- ■ 2 cups (500 mL) fresh strawberries, washed, cut in half
- ■ 1/4 cup (50 mL) balsamic vinegar
- ■ 1/2 teaspoon (2 mL) freshly ground black pepper
- ■ 8 fresh basil leaves, chopped
- ■ One 3-inch (7.5-cm) piece of dried tamarind, available in Asian grocery stores
- ■ 4 cups (1L) water
- ■ 2 tablespoons (25 mL) grated fresh ginger
- ■ 1 tablespoon (15 mL) olive oil

- 1/4 teaspoon coarse kosher salt – 1 tsp
- 1/4 teaspoon sugar – 1 tsp
- 3/4 cup of cold water – 3 cups
- 3/4 cup of milk - 3 cups
- 1 tablespoon butter - 4 Tablespoons
Partridge in White Wine Sauce

Heat the oil in the pressure cooker and brown the partridges on all sides
- 2 tablespoons olive oil
- 2 partridges or other small birds
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1 tablespoon fresh parsley, minced (or 1 teaspoon dried)
- 1 tablespoon flour
- 1/2 cup dry white wine (that is, wine that isn't too sweet)
- 1/2 cup chicken stock
- 4 oz (100g) mushrooms, sliced
Swiss Steak

Brown the chuck steak on both sides
- 2-3 Lbs chuck steak cut into serving size pieces and remove excess fats
- 1 cup baby carrots
- 4 stalks of celery sliced
- 4 or 5 medium red potatoes cut in half skins left on
- 1 cup sliced onion
- 1 cup sliced peppers
- 1 ( 14.5 ounce can) diced tomatoes
- 1 ( 15 ounce can) tomato sauce
- 1 teaspoon dried thyme
- 2 cloves garlic
- 1/4 cup water
- salt & pepper to taste
