Potato Salad

This potato salad recipe is meant to serve 200 people
- 40 lbs. russet potatoes
- 1 gallon real mayonnaise
- 4 cups sweet relish
- 8 jars bacon bits or 8 lbs. bacon, fried and crumbled
- 8 small cans corn niblets (Mexican style, if possible)
- 8 pints cooked macaroni
- 2 bunches celery, finely chopped
- 8 medium red onions, finely chopped
- 16 tablespoons Nonpareil capers
- salt and pepper to taste
- 8 tablespoons parsley or dill, finely chopped
- 2 small jars pimentos (optional)
- 16 tablespoons mustard (optional)
- 1 dozen hard boiled eggs (optional)
- salt and pepper to taste
Rhubarb and Radish Salad

Whisk lemon zest, lemon juice, honey, and mustard in a large bowl to blend

- teaspoons fresh lemon juice

- teaspoon Dijon mustard

Canadian Shepherd's Pie

Brown ground beef; do not drain
- 1 lb. ground beef
- 1 cup hot water
- 1 cup cold water
- 2 T flour
- 1 t seasoning salt
- salt to taste
- 1 large can cream-style corn
- leftover mashed potatoes
Gourmet Macaroni Salad

Directions Combine first 8 ingredients in large bowl
- 16 oz. macaroni, cooked
- 1 can kidney beans, rinsed and drained
- 2 C. frozen peas
- 1 can french style green beans, rinsed and drained
- 1 can cooked carrots, rinsed and drained
- 1 C. celery, diced
- 1 sm. onion, diced
- 1 sm. green bell pepper, diced
- Dressing-
- 3/4 C. evaporated milk
- 2 C. mayonnaise
- 2/3 C. sugar
- 1 Tbs. mustard
- salt and pepper to taste
Cucumber Pickes from North Carolina

Fill a gallon jar with cucumers washed & sliced crosswise
- 1 or 2 large onions sliced & seperated
- 4 c. sugar
- 4 c.vinegar
- 2 T. pickle salt
- 2 t. celery seeds
- 2 t. mustard seed
- 2 t. turmeric
Cheesy Tater Tot Casserole

Directions Brown the hamburger with the onions
- 2 lb. hamburger
- 1/2 sm. onion
- 8 oz. sharp cheddar cheese
- 8 oz. mozzarella cheese
- 2 8-oz. cans cream of mushroom soup
- 1 med. size bag of tater tots
Aunt Isabelle's N'awlins' Muffuletta Olive Salad

In a medium bowl, combine all ingredients
- 1 cup pimento-stuffed green olives, crushed
- 1/2 cup drained kalamata olives, crushed
- 2 cloves garlic, minced
- 1/4 cup roughly chopped pickled cauliflower florets
- 2 tablespoons drained capers
- 1 tablespoon chopped celery
- 1 tablespoon chopped carrot
- 1/2 cup pepperoncini, drained
- 1/4 cup marinated cocktail onions
- 1/2 teaspoon celery seed
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 3/4 teaspoon ground black pepper
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- 1/4 cup canola oil
Spicy Cornish Game Hens

Heat oil in pressure cooker at medium heat, and brown Cornish hen for about 3 minutes on each side
- 1 Cornish hen
- 2 tablespoons olive oil
- 4 celery ribs
- 2 cups baby carrots
- 1 tablespoon worcestershire sauce
- 2 teaspoons Tabasco sauce
- 2 tablespoons garlic, chopped
- 2 tablespoons onions, chopped
- 1/3 cup green onion (optional)
- 1 cup water
- salt and pepper
Amish Baked Porridge

In a medium sized mixing bowl, beat egg
- 1/2 cup milk
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup sugar
- 1 egg
- 1/4 cup butter, softened
- 1 teaspoon vanilla extract
- 2 tablespoons oil
- 1 3/4 cups quick-cooking oats
Waldorf Salad

Method: Wash enough lettuce leaves to line a bowl and create a bed of lettuce in the center of the bowl
- 1 head Romaine lettuce, leaves separated and washed
- 1 cup peeled, cored and diced apples
- 1 grapefruit, peeled and diced
- 1 orange, peeled and diced
- 1 cup seedless green grapes, halved
- 1/4 cup walnuts (I prefer pecans)
- 3/4 cup diced celery
- 1/2 cup mayonnaise
