Maple Glazed Carrots

- 1 lb carrots
- 2 T butter
- 2 T maple syrup
- 2 T rye whiskey
Cedar Planked Salmon

Method: Soak a cedar plank (raw, not treated or stained) for at least 4 hours or preferably, overnight
- 4 (6-oz.) filets with skin on
- 1/8 cup white wine
- zest and juice of one lemon
- 1/4 cup chopped dill

- 3/4 t ground black pepper

Put the egg, garlic, lemon juice, parsley, and green onions in a food processor and puree for 15 seconds
- 1 large egg
- 1 tablespoon minced garlic
- 2 tablespoons fresh lemon juice
- 1 tablespoon chopped parsley leaves
- 2 tablespoons chopped green onions
- 1 cup olive oil
- 1/4 teaspoon cayenne
- 1 tablespoon Creole or whole-grain mustard
- 1 teaspoon salt
Baked Walleye with Tomato Sauce and Juicy Shrimp

Preheat the oven to 375 degrees F
- For the Tomato Sauce:
- 4 walleye filets, or more
- 16 large shrimp, shelled but with tails left on
- 2 tablespoons minced fresh parsley
- Juice of 1 lemon
- 1/4 cup melted unsalted butter
- 1/2 cup dry white wine
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley sprigs, to garnish
- 19 oz canned chopped tomatoes, drained
- 1 tablespoon each cayenne pepper, salt, black pepper, chili powder and basil
- 1 tablespoon lemon juice
- 2 chopped green onions
- 1 tablespoon olive oil
- 1 minced garlic clove
Vegetable Cheese Cake

Sauté vegetables in oil until zucchini is crisp-tender; remove from heat and cool
- 3 T oil
- 3/4 cup sweet red pepper, chopped
- 1-1/2 cups mushrooms, chopped
- 1-1/2 cup zucchini, chopped
- 3/4 cup onion, chopped
- 1 large clover garlic, minced
- 6 eggs
- 1/4 cup heavy cream
- 1 lb cream cheese, diced
- 1-1/2 cups cheddar cheese, shredded
- 2 cups one-day-old bread, cubed
- salt and pepper
Saffron Barley With Chicken and Shellfish

Combine the saffron and stock, and keep warm
- 1/4 t saffron threads
- 1/4 cup vegetable stock, heated

- 10 ounces instant pearl barley
- 1 lb. mussels, scrubbed and de-bearded

- 1/2 cup dry white wine
- 2 T extra-virgin olive oil, plus extra
- 1 shallot, diced
- 6 ounces chicken breast, skinless, boneless, cut into 3/4-inch pieces

- 6 ounces asparagus, trimmed and cut into 1-inch pieces
