- 16 oz. soft silken tofu, drained
- 2 Tbsp. unsweetened cocoa powder {.5oz}
- 1/4 cup splenda
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 4 Tbsp. no-sugar-added lite cool whip
- 2 Tbsp. dry-roasted raw peanuts, chopped
CHICKEN AND EGGPLANT CASSEROLE {sb}

- 5-6 medium cloves garlic , minced or pressed through garlic press (1.5 T.)
- 1/2 teaspoon red pepper flakes
- 1.5 Tbsp. ground cumin
- 6 cups low-sodium chicken broth
- 2 tablespoons cornstarch
- 2 tablespoon water
- 2 Tbsp. lime juice (1oz), 1-2 limes
- Garnishes
- lime wedges, minced fresh cilantro leaves, red onion, finely diced avocado, diced medium, sour cream
CHIPOTLE BRISKET WITH SWEET POTATOES
