Ingredients

  • 16

    oz. soft silken tofu, drained

  • 2

    Tbsp. unsweetened cocoa powder {.5oz}

  • ¼

    cup splenda

  • 1

    teaspoon vanilla extract

  • ¼

    teaspoon salt

  • 4

    Tbsp. no-sugar-added lite cool whip

  • 2

    Tbsp. dry-roasted raw peanuts, chopped

Directions

In a food processor or blender, combine tofu, cocoa powder, splenda, vanilla and salt. Purée until smooth. Spoon pudding into 4 dessert dishes, dollop each serving with 1 tablespoon whipped topping and sprinkle each evenly with chopped peanuts. Serve right away or chill to serve later {but don’t add the topping and peanuts until ready to serve}
