HEARTY TUSCAN BEAN STEW

- Table salt
- 1 lb. dried cannellini beans, rinsed
- 1 tablespoon extra virgin olive oil+
- 6 oz. pancetta, 1/4” pieces
- 1 large onion, chopped medium
- 2 medium celery ribs, 1/2” pieces
- 2 medium carrots, peeled, 1/2” pieces
- 8 medium garlic cloves, peeled, crushed
- 4 cups low-sodium chicken broth
- 3 cups water
- 2 bay leaves
- 1 bunch kale or collard greens {1 lb} stems trimmed, 1” pieces
- 1 can diced tomatoes, drained, rinsed
- 1 sprig fresh rosemary
- Ground black pepper
- 8 slices country white bread, each 1.25” thick, broiled until golden brown on both sides and rubbed with garlic clove {opt}
CHOCOLATE COVERED STRAWBERRIES

Line large plate {or ceramic tray} with wax/parchment paper
- 1 lb. fresh strawberries with leaves
- 16 oz. dark chocolate {or your preferred type of chocolate}
- 1/4 cup blanched slivered almonds
- 1/4 cup pecan halves
TURKEY GRAVY

Spray fry pan with pam, add onion and celery and cook over med-heat until tender, 5 minutes
- 1/2 cup chopped onion {2.5oz}
- 1 celery stalk, diced
- 2 tablespoons flour
- 1 cup turkey or chicken stock
- 1 cup evaporated skim milk {8.5oz}
- 1/4 teaspoon pepper
- 1/4 teaspoon salt
CARAMEL APPLE SPICE WAFFLES

Preheat a waffle iron. Combine eggs, macadamia nuts, pecans, milk, honey and melted coconut oil in a blender
- Waffles:
- 3 large eggs
- 3/4 cup whole macadamia nuts or raw cashews
- 1/4 cup raw pecans
- 1/4 cup unsweetened almond or coconut milk
- 3 tablespoon coconut oil, melted
- 2 tablespoon honey
- 1/4 cup coconut flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon sea salt
- 2 teaspoon pumpkin pie spice
- Caramelized Apple Syrup:
- 3 tablespoon unsalted grass-fed butter, ghee or palm shortening
- 1/4 cup honey, preferably light in color
- 1 lb. baking apples, peeled, cored, diced
- 1/4 cup coconut milk
- 1 pinch of sea salt
SPICY BLACK BEAN SOUP {neeley's}

FOR THE SOUP: Heat olive oil in a Dutch oven over med-high heat
- Soup:
- 2 tablespoons olive oil
- 1 {4oz} dry-cured chorizo, chopped
- 1/2 onion, finely chopped
- 3 cloves garlic, finely chopped
- 1/2 jalapeno, seeded, diced
- 3 cans black beans, drained, rinsed
- 1 canned chipotle chile + 1 T. adobo sauce
- 4 cups chicken broth
- Sliced green onions, for serving
- Cumin Lime Sour Cream:
- 1/2 cup low-fat sour cream {4.25oz}
- 1 teaspoon ground cumin
- 1/2 lime, juice of
- Kosher salt and fresh ground black pepper

- 1/2 cup almond butter
- 6 pitted dried dates, soaked in warm water 15 minutes
- 3/4 cups shredded coconut
- 1/2 cup unsweetened applesauce
- 2 medium eggs*
- 1/2 tablespoon cinnamon
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 2 tablespoons dried unsweetened dark cherries
- 2 tablespoons chopped walnuts
- 3 tablespoons currants
