- 1 cucumber, peeled, cut length wise, seeded with a spoon,
- then cut lengthwise again (so there are quarter

- 1 large green pepper, seeded, diced into small pieces
- 3 ripe tomatoes, diced
- 3 scallions, white part only, sliced thinly into small
- rounds (family does not like onions, but they will eat these)
- TIP: You can use 1/4 cup water to loosen up the mixture instead of adding more and more mayo.

- 1 pound small white boiling potatoes
- 1 pound small red boiling potatoes
- 2 tablespoons good dry white wine

- Vanilla Whipped Cream
- Chocolate Ganache Sauce
- For the Cherry Compote
- 4 cups pitted fresh or frozen sweet cherries
- 2/3 cup water
- 3/4 cup sugar
- 1 tsp vanilla extract
- 1 1/2 tablespoons corn starch + 1/4 cup water

- 1/2 cup celery, diced finely
- 1 (10 3/4 oz.) can cream of chicken soup
- 1/2 cup milk
- 1/2 cup half and half or cream
- 1 cup chicken stock or tbsp chicken bullion
- 1 tsp dried Thyme
- 1/2 cup sour cream
- 1 (1 oz.) packet dry ranch dressing mix
- Salt/pepper to taste
- 1 teaspoon Parsley flakes
