- For elephant ears topping:
- Milk – 1 cup
- Warm water – 1 cup
- Active dry yeast – 2 tablespoons
- Salt – 1 teaspoon
- White sugar – 2 tablespoons
- Shortening – 3 tablespoons
- All purpose flour or maida – 4 cups
- Oil for deep frying
- Sugar – 4 tablespoons

Shepherds Pie Hand Pies

- 1/2 lb ground beef
- 1 cup onion, chopped
- 1 medium Yukon gold potato, peeled and diced

For Cheese mixture: Combine first six ingredients
- For Pimento Cheese Mixture:
- 1 1/2 cups – Mayonnaise
- 4 oz jar – Chopped Pimento, drained
- 1 TB – Onion powder
- 2 tsp – Garlic powder
- 1 tsp – Ground Mustard
- 1 tsp – Paprika
- 1/2 tsp – Cayenne Pepper
- Few drops – Louisiana-style Hot Sauce
- 1 lb – *Sharp Cheddar, shredded
- 8 oz – Fresh Sugar Snap Peas

- 1 cup shredded cheddar cheese
- 1 small onion, diced finely
- 1/4 cup Parmesan cheese
- 3 large eggs
- 2 tbs flour
- 2 tbsp softened butter
- 1 cup bread crumbs (panko or italian, I used panko)
- 1/2 teaspoon Italian seasoning (optional)
- 1/2 tsp cayenne pepper (more of less to taste)

- 1 green pepper, diced
- 1 large tomato or 3 Roma tomatoes, diced
- 1 cucumber, diced
- 1 medium onion, diced
- 1 cup Grated Parmesan Cheese – Store bought powdered version works best
- 1 (8 oz) bottle of Zesty Italian Dressing
- 2 tablespoons McCormick Salad Supreme Seasoning
ITALIAN LENTIL SOUP

- 2 tablespoons extra-virgin olive oil
- 2 cups diced white onion (about 1 large onion)
- 1 cup diced carrots (about 2 large carrots, peeled)
- 1 cup diced celery (about 2 celery stalks, leaves removed)
- 2 cloves garlic, peeled and minced
- 7-8 cups vegetable or chicken stock (I use half of both)
- 1 cup rinsed lentils (red, green or brown)
- 1 (15-ounce) can fire-roasted diced tomatoes (you could use any can of diced tomatoes)
- 2 bay leaves
- 1/4 teaspoon dried thyme
- 1/4 teaspoon freshly-ground black pepper
- pinch of crushed red pepper
- 2 cups roughly-chopped collard greens
- optional toppings: freshly-grated Parmesan cheese, finely-chopped fresh parsley or basil
