- 1 garlic cloves, minced
- 6 ounces unsalted butter
- 2 cups of dry white wine
- 4 cups beef stock
- 4 cups vegetable stock
- 4 Tbsp demi-glaze base
- 2 bay leaves
- 1/4 tablespoon ground thyme
- 1 teaspoons kosher salt
- 1/4 cup brandy
- 1/2 tablespoon red wine vinegar
- Pinch of pepper
- 1 baguette, sliced and toasted
- 1 pound Gruyere or provolone cheese, sliced
Real Canadian Butter Tarts

You could use pre-made puff pastry or pie shells to make the shells, or make a pie shell pastry of your own
- Another version of ingredients:
- 1 cup butter, melted
- 3 tablespoons vinegar
- 4 eggs, lightly beaten
- 4 cups brown sugar
- 2 teaspoons vanilla
- 1/4 cup currants

- 1 ⁄2 cup raisins
- 1 ⁄4 cup butter, softened
- 1 ⁄4 cup brown sugar, packed
- 1 pinch salt
- 1 ⁄2 cup corn syrup
- 1 egg, lightly beaten
- 1 ⁄2 tsp vanilla
- 1 pie dough, enough to fill 16 muffin cups (your own or from a mix)
- 1 hot water (to soften raisins)

- 4 Chicken breast, skinless fillets

- 8 oz Mushrooms, fresh white (sliced)
- 2 cups Beef broth
- 1/4 tsp Black pepper, freshly ground
- 2 tbsp Cornstarch dissolved in
- 1 salt and freshly ground black pepper
- 7 tbsp Olive oil
- 1 tbsp Butter, salted
- 1 cup Mozzarella cheese
- 3 cups Madeira wine
- This is a better-than take on Cheesecake Factory's most popular chicken dish. The sauce is simply incredible and easy to make
Smothered Chicken with Rice

I have enhanced this recipe to add more flavor to both the rice and the sauce
- 6 to 8 small chicken thighs or 3 chicken breast, cut into large strips
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 3 teaspoons garlic, minced and divided
- 1 stalk celery, finely chopped, optional but will add texture and flavor to the rice
- 1 small onion, finely diced, optional but will add flavor and texture to the rice
- 1 carrot, diced, same as above
- 2 cans cream of mushroom soup
- 1 can cream of chicken soup
- 3 teaspoons thyme leaves, divided
- 2 cups fresh mushrooms, sliced
- 1 cup milk
- 1/2 cup half and half
- 1/2 cup chicken broth
- 1/2 cup dry white wine, optional
- 3 cups instant white or brown rice, prepared
- Salt
- Fresh ground pepper
- Garlic powder
Apple Custard Pie

This is touted as French Apple Pie
- FOR THE FILLING, MELT:
- 2 Tbsp. unsalted butter
- 2 lb. baking apples such as Pink Lady or Honeycrisp, peeled, cored, and thinly sliced (4–6 total)
- 2 Tbsp. sugar
- 1 Tbsp. dark rum (optional)
- 1 ⁄4 tsp. table salt, divided
- 1 recipe Perfect Pastry Dough (see side recipe), made into a single 9-inch crust and blind-baked
- 2 eggs
- 2 egg yolks
- 1 cup heavy cream
- 1 ⁄2 cup sugar
- 1 tsp. vanilla extract
- 1 ⁄8 tsp. ground nutmeg
- FOR THE ALMOND TOPPING, COMBINE:
- 1 cup sliced almonds
- 1 ⁄3 cup sugar
- 2 Tbsp. unsalted butter, softened
- Pinch of table salt
BANANA SPLIT TRIFLE

Serves 8-10 (or just me and one other, I do share after all)
- 1 Box Yellow Cake Mix or Angel Food Cake Mix or even chocolate cake mix
- 1 Lg Pkg. Instant vanilla Pudding Please do not use banana flavored
- 3 large bananas, sliced
- 1 1/2 cups sliced fresh strawberries
- 1 1/2 - 2 cups chopped fresh pineapple (or 6 oz can of crushed pineapple, drained)
- 1 Container - Cool Whip, thawed
- 1 Jar Maraschino Cherries, diced
- 1/2 C Pecans, chopped (optional)
- 1/4 cup chocolate syrup
Boston Market Copycat Sweet Potato Casserole

Says serves 12 but for me it's more like six
- Sweet Potatoes 3 1/2 - 4 pounds sweet potatoes, peeled and cut into 1” pieces
- 4 tablespoons (1/2 stick) unsalted butter
- 3/4 cup packed light brown sugar
- 1/2 cup heavy cream
- 1 teaspoon kosher salt
- 1 tablespoon pure vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Topping
- 2 cups mini marshmallows
- 1/2 cup flour
- 4 tablespoons butter unsalted butter
- 6 tablespoons packed light brown sugar
- 1/4 cup old fashioned rolled oats
- 1/4 teaspoon ground cinnamon
SOUTHERN BUTTERMILK PIE

Spiegeleierkuchen, German Fried Egg Cake

We would call it Apricot cake but it looks like fried eggs on top
- For batter:
- 250 g (8.81 oz) of sugar
- 250 g (8.81 oz) of all-purpose flour
- 250 g (8.81 oz) of soft cold butter
- 5 eggs
- 1 teaspoon of grated lemon peel
- 2 teaspoons of lemon juice
- 2 teaspoons of baking powder
- Ingredients for topping and glace:
- 500 ml (16.9 oz) of milk
- 1 package of Vanilla Jell-O Pudding and Pie Filling
- 1 tablespoon of corn starch
- 4 tablespoons of sugar
- 600 g (21.16 oz) of crème fraîche (OR) quark (OR) sour cream
- 1 tablespoon of lemon juice
- 2 cans (each 432 g – 15.25 oz) of unpeeled apricot halves (about 24 halves)
- 500 ml (16.9 oz) of fruit juice (from apricots)
- 2 packages of Dr. Oetker clear glace (OR) 3 tablespoons of corn starch
Tropical Slaw

I am not a big fan of cole slaw mix
- 1 Bag (14 Oz) Cole Slaw Mix
- 1-1/4 Cups mayonnaise
- 1 Small (8 z) can crushed pineapple, drained and squeezed to remove as much moisture as possible
- 1 Small (8 Oz) can Mandarin oranges, drained
- 1 Small Jar (6 Oz) Maraschino cherries, drained and dried with a paper towel. then each cherry quartered
- Pinch of Salt
- Several turns of a pepper grinder
