Simple Chicken and Vegetable Soup

A simple chicken and vegetable soup
- 2 boneless skinless chicken breasts
- 1 medium onion, sliced (or 1 tsp onion powder)(real is better though)
- 1 cloves garlic, crushed (or 1 tsp garlic powder) (same here, real is better)
- 4 medium carrots, peeled and sliced (not real thick)
- 2 celery stalks, sliced
- 1 quart gluten free chicken stock
- 1 tbsp gluten free bullion
- 1/2 tsp. dried thyme
- Salt and freshly ground pepper
- Chopped curly parsley for garnish (optional)
- 2 Tbsp corn starch (If you want the soup to be a little thicker)
- You could also add a can of white beans, drained to the soup.
Swiss Vegetable Medley

Can use a frozen bag of mixed broccoli, cauliflower and carrots
- 1 (16 ounce) package frozen mixed vegetables, thawed
- Birds Eye Steam fresh Vegetables Cut Green Beans, Frozen
- 1 (10.75 ounce) can condensed cream of mushroom soup (can use cream of chicken soup)
- 1 cup shredded Swiss cheese
- 1 cup sour cream
- 1 (6 ounce) can French-fried onions
- ground pepper to taste
Baked Mashed Potato Cakes

- 1 3/4 lbs (800g) potatoes, peeled and rinsed (5-6 potatoes)
- 2 eggs
- 2 tablespoons onion, finely chopped
- Salt and fresh cracked pepper
- 1 cup pancetta (or ham, bacon…), diced
- 2 tablespoons butter
- 1 tablespoon milk
- 2 tablespoons chives, chopped
- 4 tablespoons breadcrumbs

Squash Casserole

You could add a cup of chopped cabbage or chopped zucchini to this recipe also
- 2 - 2 1/2 lb yellow squash, chopped
- 4 Tbsp butter
- 1 small onion, chopped
- 1 small green pepper, chopped (optional)
- 1/2 cup mayonnaise
- 1 egg
- 4 tsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup shredded cheddar cheese
- 1/2 cup bread crumbs
- Bake for 40 minutes.
German Potato Salad-1

CHOCOLATE MAGIC CUSTARD CAKE

- 4 eggs, at room temperature
- 1 teaspoon vanilla extract

- 110 g butter (1/2 cup), melted and cooled
