Lemon Cream Cheese Pie

You could use a graham cracker crust for this
- 1 baked pie pastry (to fit in a 9-inch pie plate)
- 1 1⁄2 cups sugar
- 6 tablespoons cornstarch
- 1 pinch salt
- 1 cup water
- 2 -3 drops yellow food coloring (optional)
- 2 teaspoons grated lemons, rind of
- 2 ⁄3 cup fresh lemon juice
- 2 tablespoons butter
- 12 ounces cream cheese, softened
- 3 ⁄4 cup powdered sugar (confectioners)
- 3 ⁄4 cup heavy cream, whipped (measure 3/4 cup already whipped)
- 1 tablespoon fresh lemon juice

Mexican Tortilla Casserole

Mexican tortilla casserole is a great recipe to make on the weekend, and have leftovers during the week
- 1 pound ground beef
- 1/2 cup onion, diced
- 1 pack taco seasoning mix
- 2 cups cheddar cheese, shredded
- 4 ounces Monterrey Jack cheese, shredded
- 1 can refried beans (they spread easier if you warm them in microwave)
- 1/2 (8-ounce) package Monterrey Jack cheese, grated or cut in chunks to mix into the preheated refried beans (makes them creamy and flavorful)
- 1 can Mexican blend corn, drained, optional
- 4 to 5 large flour tortillas
- 8 ounces thick chunky salsa (your choice mild or hot)
Cheesy Bacon Potatoes

Of course I would have to make this more fattening
- 8-10 Cups potatoes, diced finely
- 16 ounces cheddar cheese, cubed or shredded
- 1 Cup mayonnaise (real)
- 1 package bacon, cooked and torn into large bits
- 1/2 Cup green onions, chopped
- note: You could add half a stick o butter and 1/3 cup of half and half for richness. Or, you could even add 4 oz of warmed cream cheese to the mixture for richness.

- For the Frosting:

- 1/2 cup unsweetened cocoa powder
- 1 cup organic cane sugar (you can sub coconut sugar for all or part of this)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup organic canola oil or coconut oil
- 1/2 cup beet puree
- 3/4 cup water
- 1 teaspoon apple cider vinegar
- 2 avocados
- 10 Tablespoons maple syrup
- 1/2 cup unsweetened cocoa powder
