Pork Tenderloin with Pan Sauce

Combine all marinade ingredients and reserve 2-3 Tbsp
- Pan Sauce:
- 1 ⁄2 cups olive oil
- 1 ⁄3 cup soy sauce
- 1 ⁄4 cup red wine vinegar
- Juice of 1 lemon
- 1-2 tbsp Worcestershire sauce
- 1-2 tbsp fresh parsley, finely chopped
- 2 tsp dry mustard
- Freshly cracked black pepper, to taste
- 4 cloves garlic, peeled and minced
- 1 1-lb. pork tenderloin (silver skin removed)
- Pan scrapings from pork tenderloin
- 1/2 cup of chicken broth
- 2-3 tbsp of pork marinade (thoroughly mixed)
- 1-2 tsp butter
Balsamic Honey Chicken

Balsamic Grilled Chicken with Spicy Honey Bacon Glaze Yield: Serves 4-6
- For the glaze:
- 4 chicken breasts*, left whole or cut into thick strips diagonally
- 1/3 cup balsamic vinegar
- 3/4 cup olive oil or vegetable oil
- 3 tablespoons brown sugar
- 2 tablespoons steak seasoning
- 6 slices bacon, chopped
- 3/4 cup honey
- 3 tablespoons worcestershire sauce
- 1 tablespoon hot sauce (I used Frank's)

Prepare and bake chocolate cake mix per manufacturer’s instructions for a 13x9 cake
- Chocolate Peanut Butter Pie Poke Cake
- 1 box chocolate cake mix
- Eggs, oil and water for cake
- 1 8-ounce block cream cheese, softened at room temperature
- 1 14-ounce can sweetened condensed milk
- 1 cup creamy peanut butter
- 1 12-ounce tub cool whip, divided
- Chocolate sauce (such as Hershey’s)
- 3 tablespoons chopped peanuts (optional)
7 Minute Frosting - 1950's Recipe

Light and fluffy. Basically it is adding a simple syrup to egg whites and adding vanilla
- 2 egg whites
- 1 1/2 cups sugar
- 1 1/2 teaspoons light corn syrup or 1/4 teaspoon cream of tartar
- 1/3 cup cold water
- pinch of salt
Enchilada Lasagna

Brown chicken in a pan on 2 tbsp of oil
- 2 tbsp of Wesson vegetable oil
- 1 lbs Tyson chicken breast, chopped to bite pieces
- 5 cups of Kraft Mexican blend cheese
- 1 can of Campbell’s cream of celery
- 1 can of cream of chicken
- 1 1/2 cups Daisy sour cream
- 1/4 cup canned and chopped green chilies (drained)
- small corn tortillas (I like flour tortillas)
- 1 tsp McCormick cumin
- 2 tsp Morton salt
- 1/2 tsp pepper

- 2 1/2 lb beef round roast
- 1 small onion, sliced thinly
- 1/2 cup water
- 1/2 cup red wine, I used a cabernet
- 1 teaspoon basil
- 1/2 teaspoon thyme
- 1/2 teaspoon marjoram
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
CARROT APPLE BREAD

I like to double the recipe
- 1 large egg
- 1/2 cup light brown sugar, packed
- 1/3 cup liquid-state coconut oil (canola or vegetable may be substituted)
- 1/4 cup granulated sugar
- 1/4 cup cup sour cream (lite is okay; or Greek yogurt may be substituted)
- 2 teaspoons vanilla extract
- 2 teaspoons cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- pinch salt, optional and to taste
- 3/4 cup grated carrots (about 1 large peeled and trimmed carrot)
- 3/4 cup grated apples (I used 1 medium unpeeled Fuji; try Gala, Honeycrisp or similar)

Slices of beef with mushrooms in a rich, tangy cream sauce served over buttered noodles or rice
- 1.5 pounds sirloin steak, thinly sliced into strips across the grain
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 medium onion, diced
- 1 (8-ounce) package mushrooms, sliced
- 3 tablespoons all-purpose flour
- 1 (14.25-ounce) beef broth
- 3 tablespoons tomato paste
- 3 tablespoons dry Sherry
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1/2 teaspoon dried tarragon, optional
- 1/2 teaspoon dried thyme (double if you do not use Tarragon)
- 1 (8-ounce) tub sour cream or 4 ounces and 1/2 cup half and half
- 2 tablespoons parsley, chopped
- 1 (16-ounce) bag egg noodles, cooked per package directions and tossed with butter
