Pollo Guisado

Start by browning chicken on both sides, lightly salt and peppering
- whole chicken cut up or:
- 4 chicken thighs
- 4 chicken legs
- 4 medium potatoes, thickly diced
- 2 carrots, scrapped and sliced.(could use 1 can of corn instead or with)
- 1/3 cup Sofrito (recipe follows)
- 1 large can tomato sauce
- 2 pkgs Goya seasoning
- 2 cloves garlic minced
- 2 bay leaves
- 1 tsp oregano
- 4 tbs red wine vinegar
- 2 cups water or chicken broth or half and half of each
- 5 olives, chopped (optional)
- For Sofrito:
- Put 2 green peppers, 2 onions, LG bundle of cilantro in blender until well blended then run though a strainer to get rid of excess water you want sofrito thick.
- Cooked white rice
Homemade Enchilada Sauce

Serves 8
- 1 tsp extra virgin olive oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 3 tbsp chili powder
- 1 tbsp cumin
- 1 tsp salt
- 1 tsp pepper
- 1 tsp dried cilantro
- 15 oz can tomato sauce
- 1 1/2 cup chicken stock
Hasselback Chicken ~ Cajun with Pepper Jack & Spinach

I am not that fond of cooked spinach, so I suggest, sliced onions and green peppers instead
- 2 boneless, skinless chicken breast halves, about 1 1/2 lb
- 4 oz pepper jack cheese, sliced into thin 1/4 inch slices
- 1/2 c cooked spinach (frozen and thawed or sauteed fresh)
- or slightly sauteed sliced onion and green peppers
- 1 tbsp seasoned bread crumb
- 1/2 tbsp Cajun seasoning
- Salt, to taste
- Pepper, to taste
Broccoli Apple Salad

- Creamy dressing ingredients:
- 4 cups fresh broccoli florets, (about 2 medium heads)
- 1/2 cup shredded carrots
- 1/4 cup diced red onion (could use the white part of a scallion (diced finely) instead)
- 2 large apples, finely chopped (I used gala apples)
- 1/2 cup pecans, coarsely chopped
- 1/2 cup dried cranberries
- 1/2 cup lite mayonnaise
- 1/2 cup low fat greek yogurt
- 2 Tablespoons lemon juice
- 1 Tablespoon sugar
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Slow Cooker Pork Chops & Sauerkraut

A great holiday dish, especially for holidays in those cold winter months
- DRESSING:
- 4 pork chops
- 1 (32-ounce) container sauerkraut, drained
- 2 tablespoons brown sugar
- 1 tablespoon caraway seeds
- 1/2 cup chicken stock, divided
- 1/2 teaspoon salt
- 2 dollops butter
Tourte Milanese

Recipe adapted from a recipe by Michel Richard I am not a big spinach person so I would use more slices of Turkey...
- 1 pound puff pastry, chilled - homemade or store bought. If using store bought, roll both sheets together to make 1 lb, then cut off 1/4 lb for the top of the torte. Use any scraps to cut out designs for the top, if desired.
- For the Eggs
- 10 large eggs
- 1 tablespoon chopped fresh chives
- 1 tablespoon chopped fresh flat-leaf parsley
- 2 teaspoons snipped fresh tarragon
- Salt and freshly ground black pepper to taste
- 3 tablespoons unsalted butter
- Rest of Filling
- 6 large red bell peppers (could use sliced lightly sauteed green pepper)
- Salt and freshly ground black pepper to taste
- 1 1/2 pounds spinach, trimmed and washed (Could use additional cheese, and sliced turkey instead)
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 2 cloves garlic, peeled and minced
- 3 tablespoons heavy cream (optional)
- 8 ounces Swiss cheese or Gruyere, thinly sliced
- 8 ounces domestic or imported ham, thinly sliced
- 1 large egg beaten with 1 tablespoon water and a pinch of salt

This recipe reminds me of Tippy's Taco recipe
- 2 tablespoons unsalted butter
- 1/2 yellow onion, diced
- 1 tomato, diced
- 2 serrano chiles, seeded, stemmed diced
- 1 jalapeno pepper, seeded, stemmed, diced
- 2 cloves garlic, minced
- 2 tablespoons flour
- 1 teaspoon cumin
- 1/2 cup whole milk
- 1/2 cup cilantro
- 2 cups shredded asadero cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 1/4 cup sour cream
- salt to taste

- 2 cups milk
- 1 1/3 cup flour
- 1 egg
- 1 tablespoon vegetable oil
- 1/2 teaspoon baking powder
- 2 tablespoons sugar
- cooking spray
- 1/2 stick melted butter to coat cooked crapes
Honey Garlic Chicken (Crock Pot)

1. Combine sauce ingredients in bowl and whisk together
- Sauce:
- 8 whole chicken thighs (with skin and bone in) (or four chicken breast)
- 1 -lb baby red potatoes
- 1 bag baby carrots (16 oz)
- 1 pound green beans, cleaned and trimmed
- 1/2 cup honey
- 1/2 cup soy sauce
- 1 tablespoon lemon juice
- 4 cloves garlic, minced
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon pepper
Fontina and Herb Flatbread

- 4 oz pizza dough, thawed if frozen (I used approximately 1/4 of this recipe, but you can use whatever recipe you want, and I’ve even heard that many stores sell packaged pizza dough in the freezer section)
- 1-2 Tbsp olive oil
- 2 Tbsp coarsely chopped fresh herbs (such as marjoram, oregano, or thyme) OR ~2 tsp dried Italian seasoning
- 4 oz Fontina cheese, shredded
- 1 shallot, thinly sliced into rings
