Louise's version of U.S. Senate Bean Soup

There are so many versions of this soup, I guess no one knows what the real recipe is
- 1 lb. navy or great northern beans
- 1 cup chopped celery (finely)
- 1 cup chopped onion (finely
- 1/2 cup grated or shredded carrot
- 2 cloves garlic, minced
- 1 ham hock or meaty ham bone
- 1 quart of water
- 1 quart chicken stock
- 2 cups chopped ham (can use country ham or smoked ham)
- 1 Tbs. bacon drippings
- 1 tsp. salt
- 1 tsp. black pepper
- 2 Tbsp ketchup
- 2-3 drops of Tabasco sauce (optional)
Blackberry Plum Galette

I think I would put a cream cheese, half cup of sugar, one egg yolk, tsp vanilla and whip and put in bottom of past...
- 1 cup fresh blackberries
- 4 small plums, pitted and sliced
- 1/2 cup light brown sugar
- 1 1/2 teaspoons corn or tapioca starch
- 1/2 teaspoon vanilla extract
- 1 beaten egg
- raw sugar for sprinkling

Shrimp Mold

There are several versions of this recipe out there
- 1 can tomato soup
- 1 8 oz Philadelphia Cream cheese (room temperature)
- 2 tbs Knox gelatin
- 1 cup cold water
- 1 cup Mayonnaise
- 3/4 cup chopped celery (finely)
- 3/4 cup (finely) chopped mild onions or white part of spring onions (not the green part)
- 1 pint cooked shrimp (either chopped boiled shrimp (do not use canned shrimp.
- salt, Tabasco, and pepper to taste
Chicken Spaghetti

- 2 cups cooked chicken
- 3 cups spaghetti, broken up
- 2 cups chicken broth, reserved from pot
- 2 cans cream of mushroom soup
- 2 cups sharp cheddar cheese grated
- 1 cup sharp cheddar cheese grated (reserved for later)
- 1/4 cup green pepper diced fine
- 1/4 cup red pepper diced fine
- 1/2 cup diced onion fine
- 1 tsp seasoned salt (Lawry's)
- 1/5 tsp pepper flakes

New York Cheesecake

Generously butter the inside of a 10-inch springform pan
- 5 large eggs, room temperature
- 2 cups (one pint) sour cream, room temperature
- 4 8-ounce packages cream cheese, room temperature
- 8 tablespoons (one stick) unsalted butter, room temperature
- 1 1/2 cups sugar
- 2 tablespoons cornstarch
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon fresh lemon juice
- 1 teaspoon grated lemon zest (optional)

- 1 large white onion, diced
- 1 large green bell pepper, diced
- 2 tablespoons brown sugar

Hot Cheese Shrimp Dip

This dip is going to blow your mind, plain and simple
- 12 ounces (1 1/2 - 8-ounce packages) cream cheese, softened
- 1/4 cup mayonnaise
- 1/2 cup Gruyere cheese, shredded and divided
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons parsley, finely chopped, plus more for topping
- 1/4 cup butter
- 1 small shallot (or one “clove” of a big shallot), finely chopped
- 1 tablespoon garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 pound medium fresh shrimp, peeled, deveined, and coarsely chopped
- 1/4 cup white wine
- 2 tablespoons lemon juice
- 3/4 teaspoon salt and a few grinds of pepper
- Buttery crackers for serving (I used Town House Original Crackers)
Pineapple Zucchini Loaf

Whisk eggs, oil, vanilla and sugar together in a large bowl
- 3 eggs
- 2 cups sugar
- 1 cup oil
- 2 tsp. vanilla
- 2 cups grated zucchini
- 1 cup crushed pineapple
- 3 cups flour
- 1 tsp. salt
- 1 1/2 tsp. soda
- 1/2 tsp. baking powder
- 1 1/2 tsp. cinnamon
- 3/4 tsp. nutmeg
- 1 cup chopped nuts (optional)
- 1 cup raisins (optional...or substitute chocolate chips)

Cake: Mix all wet items first in a mixing bowl till well blended

- 2 cups all-purpose Flour
- 2/3 cups unsweetened cocoa powder
- ~I prefer Ghirardelli Cocoa, it tastes heavenly...
- 1 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
