Creamy Cajun Chicken Pasta

A favorite... Restaurant quality taste is perfect for company
- 3-4 boneless, skinless chicken breasts
- 1 pint heavy whipping cream
- 2 green onions, thinly sliced
- 1 pkg sliced mushrooms
- 1 sm jar sun-dried tomatoes, thinly cut
- 1 box pasta of your choice, cooked
- 2 Tbsp. butter or margarine
- 4 Tbsp. cajun seasoning
- 1 Tbsp. dried basil
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 tsp. garlic powder
- Grated parmesan cheese

- ~For ESPRESSO SPREAD:
- 4 ounces cream cheese, cubed
- 1 tablespoon sugar
- 1/2 teaspoon instant coffee granules
- 1/2 teaspoon vanilla extract
- 1/4 cup miniature semisweet chocolate chips
- ~For MUFFINS:
- 2 cups all-purpose flour
- 3/4 cup sugar
- 2-1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup 2% milk
- 2 tablespoons instant coffee granules
- 1/2 cup butter, melted
- 1 egg
- 1 teaspoon vanilla extract
- 3/4 cup miniature semisweet chocolate chips
Easy Cheesy Pizza Dip

- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1 1/2 cups shredded mozzarella cheese, divided
- 1 1/2 cups grated cheddar cheese
- 1 cup pizza sauce
- 3 tablespoons chopped green bell pepper
- pepperoni slices to taste (approx 1/4 cup)
- 3 tablespoons sliced black olives (optional)

- 1/4 cup finely chopped pecans

- 1/2 cup powdered sugar

Seared Scallops with Jalapeno Vinaigrette

- 1 large jalapeno pepper, seeded and membranes removed
- 1/4 cup rice vinegar
- 1/4 cup olive oil
- 1 teaspoon Dijon mustard
- salt and freshly ground black pepper to taste
- 1 tablespoon vegetable oil
- 12 large fresh sea scallops
- 1 pinch sea salt
