Breakfast Casserole

Prep a delicious egg, sausage, cheese and onion casserole for the week! Make in under an hour :)
- 1 can Grands buttermilk biscuits
- 1 pound pork sausage
- 4-5 green onions, white & green part, cut into slices
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded sharp cheddar
- 7-8 eggs
- 3/4 cup milk
Bean & Kale Soup

In a large pot, heat olive oil; saute garlic & onion until soft
- 4 T. olive or canola oil
- 8 large garlic cloves, minced
- 1 medium onion, chopped
- 4-5 C. chopped raw kale (stems & middle vein removed)
- 4 C. chicken or vegetable broth
- 3 C. water
- 1/3 C. ketchup
- 1 quart (4 cups) stewed or diced tomatoes
- 2 T. dried Italian herb seasoning
- Salt & pepper to taste
- 2/3 C. chopped fresh parsley (1/2 C. dried parsley)
- 3 15-oz. white navy or cannellini beans, undrained
- Shredded Parmensan cheese (optional)
Split Pea Soup

It's easy to make hearty split pea soup from scratch
- 1 meaty ham bone
- 2 tablespoons butter
- 3 quarts water
- 2 cans chicken broth
- 1 large onion, chopped
- 1 pound package of split peas
- 1 bay leaf
- 4 celery ribs, sliced, leaves included
- 6 to 7 carrots, sliced
- 1 1/2 cups diced ham
- 2 tablespoons parsley
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 3 medium potatoes, diced (optional)
- 3 Roma tomatoes, diced
Tuna Noodle Casserole

Cook noodles as directed on box
- 6 oz.(3 cups) elbow noodles
- 2 6-7 oz. cans of tuna (drained)
- 1/2 C. mayonnaise
- 1 C. sliced celery
- 1/2 C. chopped onion
- 1/3 C. chopped green bell pepper
- 1 small jar of pimientos
- 1 small can sliced mushrooms
- 1 t. salt & 1 t. pepper
- 1 10-1/2 oz.can cream of celery or cream of mushroom soup
- 1/2 C. milk
- 4-5 oz. (1 cup) sharp shredded cheddar cheese or Velveeta
Edamame, kidney bean & chick pea salad

Thaw & drain soybeans in colander, rinse with cold water
- 2 C. frozen sweet soybeans (edamame)
- 1 15 oz. can kidney beans, rinsed & drained
- 1 15 oz. can garbanzo beans (chickpeas)rinsed and drained
- 1/2 C. thinly sliced red onion
- 1/2 C. chopped fresh cilantro
- 1/4 C. olive oil
- 1 t. finely shredded lime peel
- 1/4 C. lime juice
Wild Rice & Ham Chowder

In a sauce pan over medium heat, saute onion & garlic in butter until tender
- 1/2 C. chopped onions
- 4 garlic cloves, minced
- 1/4 C. butter (no substitute)
- 7-8 T. flour
- 1/2 t. salt
- 1/4 t. pepper
- 6 C. chicken broth
- 4-5 medium potatoes, peeled & cubed
- 1/2 C. sliced carrots (I use the mini carrots)
- 1 large bay leaf
- 1/2 t. dried thyme
- 1/4 t. nutmeg
- 1 box Rice-A-Roni Long Grain & Wild Rice w/spice packet
- 2 to 2-1/2 C. fully cooked cubed ham
- 2 C. half & half OR 2 cups milk
- 1 can whole kernel corn, drained
- Minced fresh parsley
Kiss Me Cookies

Preheat oven to 350. In a large bowl beat the butter, powdered sugar & salt until mixed well
- 1 Cup butter, softened
- 1 Cup powdered sugar
- 1/2 tsp. salt
- 2 tsp. maraschino cherry juice
- 1/2 tsp. almond extract or vanilla extract
- 6-7 drops of red food coloring
- 2-1/4 cups all purpose flour
- 1/2 cup chopped maraschino cherries
- 1 bag of dark chocolate Hershey kisses
Stuffed Strawberries

Hull berries and hollow a little out of the middle with a small knife
- Strawberries
- Cream cheese, 1/2 brick, softened at room temperature
- Walnuts OR pecans, chopped into small pieces (approx. 3 T.)
- Vanilla OR almont extract, 1/2 teaspoon
- Mini chocolate chips 6-7 for each strawberry
- Powdered sugar
Mexican Caviar

Combine oil, vinegar, Tabasco and salt in a large bowl, mix well
- 1/3 C. olive oil
- 1/4 C. red wine vinegar
- 1-1/2 t. Tabasco pepper sauce
- 3/4 t. salt
- 2 cans (16 oz.) black beans, drained and rinsed
- 2 cans (11 oz.) corn, drained & rinsed
- 2 large tomatoes, chopped
- 2 rip avocados, pitted, peeled & diced
- 4 scallions, sliced
- 3 T. fresh chopped cilantro
My Special Potato Salad

Boil potatoes in a large pot for approximately 20 minutes
- 10-11 medium red skin or Yukon gold potatoes or a combination of each
- 3 hard boiled eggs, cooled & chopped
- 4 celery ribs, sliced on the diagonal
- 1 medium onion, diced
- 4 green onions, slices with some of the green tops
- 1/2 each of a green pepper, red pepper and orange pepper, diced
- 5-6 slices of bacon, cooked, drained and crumbled
- 1 t. dillweed
- 1 T. parsley, dried OR 2 T. fresh, chopped
- 1 C. Miracle Whip
- 2/3 C. sour cream
- 2/3 C. Good Seasons Italian dressing, mixed in the cruet
