Italian Style Spaghetti Squash
By corvettemary
Preheat oven to 375. Pierce squash with fork
- 1 lb. spaghetti squash, leave whole
- 1/4 C. extra virgin olive oil & more for drizzling
- 2 cloves fresh garlic, minced
- 1/2 medium red onion, diced small
- 1 medium zucchini, diced medium
- 3 medium tomatoes, diced large
- 1 t. kosher or sea salt
- 1/4 C. Parmesan cheese, grated
- 6 fresh Basil leaves
- pinch red pepper flakes
Salisbury Steak

In a large bowl mix ground beef, bread crumbs, egg, garlic salt, pepper, water & Worcestershire sauce
- 1-1/4 pounds ground beef
- 1/3 C. dry Italian bread crumbs
- 1 egg
- 1/2 t. garlic salt
- 1/4 t. pepper
- 3-1/2 T. water
- 2-1/2 T. Worcestershire sauce
- 3 T. ketchup
- 1 package Lipton Onion Mushroom soup mix (or any other soup mix to make a gravy)
- 1 small can of sliced mushrooms or 1/2 pound fresh, sliced
My Grandma's Spaghetti Sauce

In large pot simmer chicken in 3-4 quarts of water for about 1 hour
- 1-1/2 to 2 pounds chicken thighs, w/skin & bones
- 1-1/2 pounds ground chuck or 90% hamburger
- 1 pound hot Italian sausage bulk or in a tube (sometimes I get the large link and slice it)
- 1 large onion
- 7-8 garlic cloves, diced
- 1 quart tomatoes, stewed or diced
- 1 small can tomato paste
- 2 small cans tomato sauce
- 2 small cans sliced mushrooms
- 2 T. Italian seasoning
- 1 t. black pepper
Chicken Jambalaya

Season the chicken with salt & pepper
- 4 large boneless chicken breasts cut into 2 inch chunks
- Salt & black pepper
- 1 T. olive oil
- 6-8 ounces chicken andouille sausage, cut into 1 inch slices
- 1 T. Adobo powder
- 1/4 t. chipotle chili powder
- 1-1/2 C. chopped yellow onions
- 1 C. chopped red bell pepper
- 4 cloves garlic, minced
- 1 C. reduced sodium chicken broth
- 2 bags Ready Rice, long grain & wild rice
- 1 can black beans, rinsed
Sausage Cheese Balls

Preheat oven to 375. Combine all ingredients in a large bowl, stir well
- 2 pkgs. (16 oz.each) hot pork sausage
- 1-1/2 cups all purpose baking mix
- 16 oz.(4 cups) shredded sharp cheddar cheese
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped celery
- 2 t. black pepper
- 2 t. minced garlic (optional)
Oatmeal Cranberry White Chocolate Chunk Cookies

Preheat oven to 375. Using electric mixer, beat butter and sugar together until light and fluffy
- 2/3 C. butter, softened
- 2/3 C. brown sugar
- 2 large eggs
- 1-1/2 C. old fashioned oats
- 1-1/2 C. flour
- 1 t. baking soda
- 1/2 t. salt
- 1 6 oz. Ocean Spray Craisins, dried cranberries
- 1/2 C. white chocolate chunks or chips
- 1/2 C. chopped walnuts
Sweet Potato Pineapple casserole

Preheat oven to 375. Lightly grease a 9" x 13" baking dish
- TOPPING:
- 10-12 large sweet potatoes, whole
- 1 20 oz. can crushed pineapple, drained
- 1-1/4 cups sugar
- 6 T. butter, melted
- 3 eggs
- 2 t. salt
- 2 t. ground cinnamon
- 1/4 t. ground allspice
- 1/4 t. ground nutmeg
- 1/2 C. brown sugar
- 2 T.butter, melted
- 1/3 C. all purpose flour
- 1 C. pecans or walnuts, chopped
Pasta & Veggie Salad

In a large bowl mix pasta, cukes, onions, celery, peppers, corn, peas & carrots
- 3 C. cooked elbow noodles or shells (or any pasta you want)
- 2 baby cucumbers, diced
- 1 medium red onion, diced
- 4 green onions, sliced including some green
- 3-4 celery stalks, sliced
- 1/2 each green pepper, red pepper, orange or yellow pepper, diced
- 1 can baby corn, drained
- 1 can peas & carrot, drained OR 1 small bag baby carrots, blanched & sliced & 1 C. frozen peas
- 1 C. Miracle Whip
- 1 C. sour cream
- 1/2 C. Ranch or Italian dressing
- 2 t. dill weed
- 2 T. parsley, either dried or fresh
Hot German Potato Salad

Cook bacon till crisp, drain crumble, reserving 1/4 C
- 6-7 slices bacon
- 1/2 C. chopped onion
- 2 T. all purpose flour
- 2 T. sugar
- 1-1/2 t. salt
- 2 t. celery seed
- 1/2 C. white vinegar
- 6-7 C. cooked potatoes (I use red and don't peel)
- 2 hard boiled eggs, sliced (optional)
- Parsley
Dump Cake

Preheat oven to 350. Spread pineapple and cherry pie filling evenly on the bottom of an 8x8 greased pan
- 1 can (20 oz.) crushed pineapple
- 1 can (20 oz.) cherry pie filling
- 1 box yellow cake mix
- 1/2 C. chopped walnuts or pecans
- 1/2 pound of butter
