Carrot & Garlic salad

If you like garlic...this is for you
- 2 C. carrots, shredded
- 1/4 t. salt
- 1/8 t. pepper
- 4-5 cloves garlic, minced
- 2 T. lemon juice
- 4 T. vegetable oil
- 2-3 T. parsley
Mary's Chicken Chili

In large pot heat oil & butter
- 6 T. vegetable oil
- 3 T. unsalted butter
- 1-1/2 pounds boneless/skinless chicken breast OR B/S thighs,cut into bite sized pieces
- 1 medium onion, chopped
- 5 garlic cloves, minced
- 1 can Brooks Chili hot beans, undrained
- 1 can Bush's seasoned recipe black beans, undrained
- 1 can cannellini beans, drained & rinsed
- 1 can Rotel original diced tomatoes
- 1 can stewed or diced tomatoes
- 2 T. chili powder
- 1 green pepper, diced
- 3 T. parsley, dried OR fresh chopped without stems
- Tortilla chips, optional
- Shredded cheese, flavor of choice, optional
- Sour cream, optional
Pumpkin Spice dessert bars

Preheat oven to 350. Spray 10x14 pan with Pam
- CRUST:
- Pam for spraying pan
- 1 package of spice cake mix (18.25 oz.)
- 4 T. (1/2 stick) butter, melted
- 1 large egg
- FILLING:
- 1 8 oz. package of cream cheese, room temperature
- 1 can pumpkin (15 oz.)
- 1 can (14 oz.) sweetened condensed milk
- 2 large eggs
- 1 t. pumpkin pie spice or cinnamon
- TOPPING:
- 1 C. chopped walnuts or pecans
Cherry Chocolate Chip Walnut cake

Preheat oven to 350. Mix all cake ingredients together using a spoon or spatula
- 1 box white cake mix
- 3 eggs
- 1 (21 oz) can cherry pie filling
- 1 C. mini chocolate chips
- 1 C. chopped walnuts
- ICING
- 2 T. warm water
- 1 t. vanilla extract
- 1 t. almond extract or black walnut extract
- 1/4 t. salt
- 1-2/3 C. powdered sugar
Zucchini & Potato Pancakes

Combine shredded potatoes, onions, zucchini & lemon juice in a large bowl
- 6-7 large potatoes, peeled and shredded
- 1 large onion, peeled & shredded
- 2 small zucchini, NOT peeled but shredded
- 1 T. lemon juice
- 2 eggs, beat well
- 1 T. buttermilk or whole milk
- 4 T. flour
- 1 t. pepper
- Salt to taste
- Applesauce & sour cream
Chicken, Spinach & Bean Soup

In large saucepan cook chicken in broth until no longer pink
- 3-4 quarts chicken broth
- 2 boneless skinless chicken thighs or 1 large chicken breast, cut into bite sized pieces
- 4-5 garlic cloves, minced
- 1 medium onion, diced
- 2 bags fresh spinach OR 1 box frozen spinach, thawed
- 1 can sliced mushrooms
- 1 can Great Northern beans, drained and rinsed
- 1 can Butter beans, drained and rinsed
- Grated Parmesan cheese
Cranberry Relish

In a medium saucepan, boil the water & sugar until the sugar is dissolved
- 1 C. water
- 1 C. white sugar
- 12 oz. package fresh cranberries
- 1 orange, peeled and pureed
- Juice of one lemon
- 1 apple, peeled, cored & diced
- 1 pear, peeled, cored & diced
- 1 C. chopped dried mixed fruit
- 1 C. chopped pecans
- 1/2 t. salt
- 1 t. ground cinnamon
- 1/2 t. ground nutmeg
Mary's Baked Beans

Preheat oven to 375 degrees
- 3/4 pound of bacon, chopped
- 1 large onion, chopped
- 1 can pork & beans, undrained
- 1 can Bush's seasoned recipe black beans, undrained
- 1 can red kidney beans, drained
- 1 can white northern beans, drained
- 1 can butter beans, drained
- 1 C. ketchup
- 1/2 C. sugar
- 1/2 C. packed light brown sugar
- 3 T. vinegar
- 2 T. Worcestershire sauce
Chocolate Chip Pie

VERY rich pie. It is better when cut into 8 pieces instead of 6
- 1/2 C. butter, melted & cooled
- 1 C. sugar
- 1/2 C. flour
- 2 eggs
- 1 t. vanilla
- 1/4 t. salt
- 1 6 oz. package chocolate chips
- 1/4 C. butterscotch chips (optional)
- 1 C. chopped walnuts
- 1 unbaked 9" pie shell
Sausage Stuffed Portobello Mushrooms

These mushrooms can be either grilled or baked in an oven
- 1 - 8.5 oz. package wild rice mix
- 4 oz. feta cheese, crumbled or any shredded cheese
- 1/4 C. chopped fresh parsley
- 1 pound sweet or spicy Italian or hot bulk sausage, casing removed
- 1 T. olive oil
- 8 large portabella mushroom caps, stems removed
- reduce heat to medium and cook until mushrooms are tender and show grill marks, about another 6 minutes.
