Mary's Chicken Noodle Soup

Homemade and YUMMY!!
- 4-5 chicken thighs, with bones & skin
- 4 quarts of water
- 4 garlic cloves, minced
- Chicken soup base (to taste)
- 1 medium onion, diced
- 5-6 celery ribs, sliced diagonally
- 2/3 C. sliced carrots (I use the mini carrots)
- 1 pound of noodles
- 1 C. frozen green peas
- Pepper to taste
- 1/4 C. Parsley
Sloppy Joe's

This is a very easy recipe that uses ingredients you probably have in your kitchen already
- 1 pound ground beef
- 1 C. chopped celery
- 1 C. chopped onions
- 3 medium garlic cloves, minced
- 1 8 oz. can tomato sauce
- 1 10-3/4 oz. condensed tomato soup
- 1 T. Tabasco sauce (or to taste)
- 3/4 t. salt
- 1/2 t. MSG (Accent)
- 1 T. chili powder
- 1/8 t. liquid smoke (optional)
My Favorite Chili

Brown ground beef with onion & garlic until no longer pink
- 1-1/2 pounds ground beef 90% lean
- 1 large onion
- 5 garlic cloves, minced
- 2 cans Brooks Chili Hot Beans with gravy (or 1 large can)
- 1 can Bush's Seasoned Black Beans, not drained
- 1 can tomato soup
- 2 cans diced or stewed tomatoes (extra spicy & hot-make 1 can Rotel original)
- 1 small green pepper, cored, ribs removed and diced
- Salt & pepper to taste
- 2 T. chili powder
- Tabasco sauce
- Your choice of shredded cheese
Chicken Lemon Rice Soup

Mix soup base with water according to directions on package in large pot
- 3 quarts water
- Chicken soup base mix
- 2-3 T. butter
- 3 T. dried parsley or 1/3 C. fresh parsley
- 1 medium onion, chopped
- 6 cloves garlic, chopped
- 1 medium boneless/skinless chicken breast or 4 b/s chicken thighs
- 2/3 C. rice
- 2 eggs, lightly beaten
- 3 lemons, juiced
- Salt & pepper to taste
- 2/3 C. milk, 3 T. corn starch (optional)
Angel Food Cake w/walnuts & fruit

- 1 pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding & Pie Filling
- 1 can (20 oz.) DOLE Crushed Pineapple in Juice, undrained
- 1 cup thawed COOL WHIP Whipped Topping
- 1/2 C. chopped walnuts
- 1 prepared round angel food cake (10 oz.)
- 10-12 fresh strawberries, rinsed & dried, green leaves removed
- Large handful of fresh blueberries, rinsed & dried
Lasagne

You will need a 13 x 9 pan at least 3" deep!
- MEAT MIXTURE:
- 1 Box of lasagne noodles
- 2 lbs. of lean ground round or hamburger
- 1 lb. hot Italian sausage (bulk or links, casings removed)
- 5 garlic cloves, minced
- 1 small onion, diced
- 1 T. basil
- 1 t. salt
- 1 small can of mushrooms
- 1 quart of stewed tomatoes OR 2 cans stewed tomatoes
- 2 6 oz. cans of tomato paste
- EGG/CHEESE MIXTURE:
- 2 large eggs
- 2 C. Ricotta cheese
- 1-1/2 C. cottage cheese
- 1/2 C. grated Parmesan or Romano cheese (or a mixture of both)
- 2 T. parsley flakes
- 1 t. salt
- 1/2 t. pepper
- 1 t. nutmeg
- 1 pound of mozzarella OR provolone cheese, sliced thin (or a combination of both cheeses)
Lemon-Garlic Chicken Thighs

Preheat the oven to 350 degrees F
- 8 chicken thighs with bones and skin, about 3 1/2 pounds
- 1 3/4 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 1/2 cup all-purpose flour
- 1/4 cup olive oil
- 3 cups thinly sliced onions
- 30 cloves (about 2 heads) garlic, peeled and smashed
- 1/2 teaspoon crushed red pepper
- 1 bay leaf
- 1/2 cup freshly squeezed lemon juice
- 1 1/2 cups chicken broth
- 1 pound angel hair pasta
- 3 tablespoons chopped fresh parsley leaves, plus more for garnish
- 3 tablespoons unsalted butter
Broccoli & Cranberry Salad

Combine all salad ingredients in a large mixing bowl, mix well
- SALAD:
- 4 C. broccoli florets, cut into 1/2" pieces
- 1/2 C. chopped red onion
- 2/3 C. shredded sharp cheddar cheese
- 8 slices cooked crumbled bacon pieces
- 1/2 C. sunflower kernels OR chopped walnuts
- 3/4 C. Ocean Spray Craisins dried cranberries
- DRESSING:
- 1 C. salad dressing or mayonnaise
- 1/4 C. sugar
- 2 T. red wine vinegar
- 1/2 t. salt
- 1/4 t. black pepper

Combine chicken broth, water, parsley, bouillon cubes & garlic in a large pot
- 1 quart chicken broth
- 1 quart water
- 4 chicken bouillon cubes
- 4 garlic cloves, minced
- 2 T. parsley flakes or 3 T. fresh, chopped
- 2 boneless/skinless chicken thighs, cut into small pieces
- 3/4 C. uncooked long grain rice
- 2 eggs
- 4 lemons
- 1/2 C. packed raw baby spinach leaves (optional)
Unstuffed Cabbage Soup

Brown ground beef with onion and garlic until no longer pink
- 1 pound ground beef
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 quart stewed tomatoes OR 2 15 oz. cans stewed or diced tomatoes
- 6 C. water
- 1 C. white or brown rice
- 1 large can tomato sauce
- 1/3 C. ketchup
- 2 T. Worcestershire sauce
- 1 t. chili powder
- 1 small head of cabbage OR 1/2 large head shredded OR 1 bag of cole slaw mix
- OPTIONAL: 1 can Rotel original diced tomatoes with jalapenos
