Crispy Cheddar Chicken

1. Crush crackers. If using breasts, cut into 3 large pieces
- Sauce:
- 2 lbs. chicken tenders or 4 large chicken breasts
- 2 sleeves Ritz Crackers
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/2 C whole milk
- 3 C cheddar cheese, grated
- 1 tsp. cried parsley
- 1 10 oz. can cream of chicken soup
- 2 TBS. sour cream
- 2 TBS. butter
Rhubarb Strawberry Crisp

- 4 c. rhubarb pieces (about 1 lb.)
- 2 c. sliced strawberries
- 1 c. sugar
- 1 1/3 c. flour, divided
- 1/2 tsp. cinnamon
- 1 c. brown sugar
- 1 c. old fashioned rolled oats
- 1/4 tsp. nutmeg
- 1/2 c. butter, melted & cooled
- In large bowl combine rhubarb, strawberries, sugar, 1/3 cup flour and cinnamon. Transfer to greased 9 x 13 inch baking dish.
- In another bowl combine remaining 1 cup flour with brown sugar, oats and nutmeg. Add butter and blend well to create the streusel. Sprinkle streusel over rhubarb mixture and bake at 350 degrees for 35-40 minutes
Chai-Apple Pie Coffee Cake

- 1 1/4 cup flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup butter
- 1/3 cup chai tea latte concentrate (recommended: Oregon Chai™ Tea Latte, Original)
- 1 egg
- 1 teaspoon vanilla
- Streusel:
- 1/2 cup flour
- 1/2 cup packed brown sugar
- 3 tablespoons butter
- Apple Topping:
- 2 cups of apples, peeled, cored and sliced
- 2 tablespoons butter
- 1/4 cup chai tea latte concentrate
- 2 tablespoons brown sugar
Rhubarb -Berry Jam

- 3 lbs. rhubarb, trimmed and sliced into 1/2 inch pieces
- 2 C packed mixed berries, fresh or frozen
- 1 C water or apple juice
- 5 1/2 C sugar
- juice of one lemon
- pinch of salt

Cinnamon Nut Loaf

This recipe if from a Taste of Home, Quick Cooking magazine and looked yummy and quick and easy
- 1/3 C finely chopped pecans or walnuts
- 1/4 C sugar
- 3 TBS. butter, melted
- 2 tsp. ground cinnamon
- 2 tubes (7 1/2 oz. each) refrigerated buttermilk biscuits
- 1/2 C confectioners' sugar
- 1 TBS. milk
Crisp Almond Biscotti

I made this recipe and it was great! I dipped the finished product in melted caramel and chocolate
- 1 3/4 C all purpose flour
- 1 C sugar
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 C whole almonds toasted
- 2 large eggs
