Pineapple Salsa (for meat)

Perfect for pork on the grill
- 1 C freshly chopped pineapple
- 2 TBS. finely chopped purple onion
- 2 TBS. finely chopped green onion
- 1 TBS. finelay chopped red pepper
- 1 TBS. fresh cilantro
- 1 TBS. honey
- dash red pepper
- Juice of 1 fresh line (about 1 1/2 - 2 TBS)
- 1/4 tsp. black pepper
French Toast Filling

- 1/2 package of cream cheese
- 3 TBS. Jelly/Jam of your choice
Roasted Tomato Bisque

This soup is one that I have served at a Christmas tea
- 2 1/2 lbs. Roma tomatoes, halved
- 1 large yellow onion, sliced
- 1 TBS. minced garlic
- 2 TBS. olive oil
- 1 1/2 tsp. salt, divided
- 1 tsp. ground black pepper, divided
- 1 quart low-sodium chicken broth
- 1 (6 oz.) can tomato paste
- 2 TBS. fresh lemon juice
- 1 TBS. Worcestershire sauce
- 2 C finely grated Parmigiano Reggiano cheese
- 1/2 C heavy whipping cream
- 1/3 C chopped fresh basil
Mashed Potato Timbales

This is a recipe that I found in a Light & Tasty magazine as an insert
- 2 1/2 lbs. potatoes, peeled and cubed
- 1 TBS. butter or stick margarine
- 1 TBS. grated onion
- 1 carton (8oz) reduced -fat ricotta cheese
- 1 C (8oz) reduced-fat sour cream
- 1 tsp. salt
- 1 tsp. garlic powder
- 1/2 tsp. dried rosemary, crushed
- 1/4 tsp. pepper
- 2 egg whites
- 2 TBS. dry bread crumbs
Southern Pecan Praline Cake

This recipe was given to me by my sister who is a huge "Pioneer Woman" fan
- Sauce:
- 1 (15 oz.) box Butter Pecan Cake mix
- 1 (16 oz.) tub of Coconut Pecan frosting
- 4 eggs
- 3/4 C oil
- 1 C water
- 1/2 C Chopped pecans
- 1 (14 oz.) can sweetened condensed milk
- 2 tsp. butter
- 1/2 C chopped pecans
Blackberry Buttermilk Snacking Cake

When I bake, I use whatever is in season and is inexpensive
- 1 C all purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 4 TBS. unsalted butter, softened
- 2/3 C plus 1 1/2 TBS. sugar
- 1 large egg, at room temp.
- 1 tsp. pure vanilla extract
- 1/2 C buttermilk, at room temp.
- 1 1/4 C blackberries plus more for serving
- Sweetened whipped cream for serving

- 6 TBS. unsalted butter cut into 1/2 " cubes
- 1/4 C veg shortening or lard (****if using self rising flour, use 1/2 C of shortening)
- 4 C of all purpose flour (****If using self rising flour, add 2 TBS. sugar and disregard the following)
- 2 TBS. sugar
- 2 TBS. baking powder
- 2 tsp. baking soda
- 2 tsp. kosher salt
- 1 tsp. pepper (freshly ground)
- 1 3/4 C buttermilk
