Chocolate Cookie Cake

This cake recipe comes from a Taste of Home's Quick Cooking magazine and just looked quick, easy and yummy
- 1 pkg. (18 1/4 oz.) white cake mix
- 16 cream filled chocolate sandwich cookies, coarsely crushed
- 1 pkg. (3 oz.) cream cheese, softened
- 2 tsp. milk
- 2 C heavy whipping cream
- 3/4 C confectioner's sugar
- additional cream-filled chocolate sandwich cookies
Southwest Crunch Chicken Salad

- 1 1/3 C fat-free Mayo.
- 1/2 C minced fresh cilantro
- 1/4 C lime juice
- 2 garlic cloves, minced
- 1 3/4 tsp. ground cumin
- 3/4 tsp. grated orange peel
- 1/2 tsp. salt
- 9 cups cubed cooked chick. brst.
- 1 3/4 cups jicama
- 1 3/4 chopped celery
- 1 3/4 cups chopped sweet red peppers
- 1 C chopped cashews
- 1/2 lb. turkey bacon strips, diced/cooked
Three-Bite Cheesecakes

This recipe was given to me by my friend, Becky
- 36 2 inch foil baking cups
- 36 vanilla wafers
- 1 1/2 C (9 oz. pkg.) Toll House Delightfuls Cherry flavored filled Morsels
- 2 pkgs. (8 oz. each) cream cheese, at room temp.
- 1/3 granulated sugar
- 2 TBS. all-purpose flour
- 2 Large eggs
- 1/2 tsp. almond extract
Apple Muffins

1. Preheat oven to 350. Combine apples and sugar, then add the rest of the dry ingredients
- 3 1/2 C flour
- 1 TBS. cinnamon
- 3 C finely chopped apples
- 1 C vegetable oil
- 2 C sugar (half brown, half white)
- 3 eggs
- 1 tsp. salt
- 2 C chopped nuts
- 2 tsp.soda
- 2 tsp. vanilla
Quick & Easy Peach Cobbler

1. Melt butter in 2 quart casserole dish in 375 degree oven while combining flour, sugar, and baking powder
- 1 C flour
- 1 C sugar
- 1 1/2 tsp. baking powder
- 1 stick butter
- 3/4 to 1 C milk
- 1 large can sliced peaches
- 1 tsp. cinnamon (optional)
- 3 TBS. sugar (optional)
Blueberry Crumb Cake

1. Preheat oven to 375. Grease 9 square pan
- Crumble Topping:
- 1/2 C brown sugar
- 1/2 C flour
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 C butter softened
- Cake:
- 2 C flour
- 2 tsp. baking powder
- 1/4 salt
- 1/2 tsp. cinnamon
- 3/4 C sugar
- 1/4 C butter, softened
- 1 large egg
- 1 tsp. vanilla
- 1/2 C buttermilk
- 3 C fresh blueberries (or frozen but do not thaw!)
Almond Cheddar Appetizers

- 1 C mayo
- 2 tsp. worcestershire sauce
- 1 C (4oz.) shredded sharp cheddar cheese
- 1 med. onion, chopped
- 3/4 C slivered almonds, chopped
- 1 loaf (1 pound) french bread
8 Can Taco Soup

- 1 (15 oz.) can black beans drained and rinsed
- 1 " can pinto beans drained and rinsed
- 1 (14.5 oz) can petite diced tomatoes, drained
- 1 (15.25 oz) can sweet corn, drained
- 1 (12.5 oz) can white chicken breast, drained
- 1 (10.75 oz.) can cream of chicken soup
- 1 (10 oz.) can green enchilada sauce
- 1 (14 oz.) can chicken broth
