Tomatoe Basil Scones

Found this recipe in one of my tea magazines
- 2 C flour
- 1 TBS. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 TBS sugar
- 1/2 C butter
- 2/3 C buttermilk
- 5-6 sun dried tomatoes, chopped
- 1 bunch basil
- 1/2 C cooked bacon
- 1/2 - 1 C mozzarella
Blueberry Scones

This recipe is from a Taste of Home's Quick Cooking magazine
- 4 C all-purpose flour
- 6 TBS. sugar
- 4 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 C plus 2 TBS colt butter or margarine
- 2 eggs
- 3/4 C plus 2 TBS. milk, divided
- 1 1/2 C fresh or frozen blueberries
Tomato Basil Pasta

- 12 oz. pasta
- 1 can (15 oz.) diced tomatoes with liquid
- 1 large sweet onion, cut in julienne strips
- 4 garlic cloves thinly sliced
- 1/2 tsp. red pepper flakes
- 2 tsp. dried oregano leaves
- 2 large sprigs basil, chopped
- 4 1/2 C vegetable broth (not low sodium)
- 2 TBS. extra virgin olive oil
- Parmesan cheese for garnish
Fresh Basil Pesto

1. Combine the basil in with the pine nuts, pulse a few times in a food processor
- 2 C freshly basil leaves, packed
- 1/2 C freshly grated Parmesan-Reggiano or Romano cheese
- 1/2 C extra virgin olive oil
- 1/3 C pine nuts or walnuts
- 3 med. sized garlic cloves, minced
- Salt and freshly ground black pepper to taste
Pumpkin Scones with Glaze

In a large bowl, combine the first seven ingredients
- GLAZE:
- 4-1/2 cups all-purpose flour
- 1/2 cup packed brown sugar
- 4 teaspoons Baking Powder
- 3 teaspoons pumpkin pie spice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup cold butter
- 2 eggs
- 1-1/4 cups canned pumpkin
- 3/4 cup milk, divided
- 2 cups confectioners' sugar
- 3 tablespoons milk
- 1/4 teaspoon pumpkin pie spice

- 6 TBS. unsalted butter cut into 1/2 " cubes
- 1/4 C veg shortening or lard (****if using self rising flour, use 1/2 C of shortening)
- 4 C of all purpose flour (****If using self rising flour, add 2 TBS. sugar and disregard the following)
- 2 TBS. sugar
- 2 TBS. baking powder
- 2 tsp. baking soda
- 2 tsp. kosher salt
- 1 tsp. pepper (freshly ground)
- 1 3/4 C buttermilk

- 1 C sugar
- 1 1/2 C flour
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 C cooked pumpkin (Libby's suggested)
- 3/4 C oil
- 2 large eggs
- 1 small pkg. (3.4 oz.) coconut cream pudding (use vanilla if coconut can't be found)
